Resumo: | Proximate composition and fatty acid profile of snail (Helix aspersa maxima) muscle submitted the diets containing differents protein source (soybean meal; soybean meal + canola meal; canola meal; soybean meal + sunflower meal; and sunflower meal) were analyzed. Fatty acid were analyzed using a gas chromatograph fitted with flame ionization detector and fused silica capillary column. The fatty acids predominant in diets were: 16:0, 18:0, 18:1 n-9, 18:2 n-6 and 18:3 n-3. All the treatments presented high fatty acids polyunsaturated in the escargot comestible part (muscle). The treatment using canola meal presented high protein level and the better ratio n-6/n-3. |

Os ácidos graxos foram identificados em cromatógrafo gasoso equipado com detector de ionização de chama e coluna capilar de sílica fundida. Foram predominantes nas dietas os ácidos graxos: 16:0, 18:0, 18:1 n-9, 18:2 n-6 e 18:3 n-3.
