Vibrio parahaemolyticus isolados de ostras (Crassostrea rhizophorae) comercializadas em Fortaleza-CE, Brasil

Resumo: Vibrio bacteria are associated with epidemiological outbreaks due to consumption of raw oysters. This study aimed to quantify total, sucrose positive and negative Vibrio, isolate and identify V parahaemolyticus in fresh and frozen oysters, marketed in Praia do Futuroin Fortaleza, and to determine the virulence profile of these strains using Kanagawa and urease tests. It was analyzed 300 oysters: 150 marketed fresh and 150 frozen. Quantification was done by Standard Plates Counts and the strains were biochemically identified. In Kanagawa test was used Wagatsuma Agar and detection of urease was perfoimed in urea broth containing 1% of NaCl. Vibrio counts for fresh oysters varied from 475 est to 36,000 CFU (Colonies Forming Units) g-1-and for frozen oysters varied from 400 est to 26,250 CFU g-1. It was isolated 39 strains (48.8%) of V. parahaemolyticus of fresh oysters samples, and 10.2% were Kanagawa positive and a sample (2.6%) was positive, concomitantly, to the two tests. For frozen oysters it was isolated 49 strains (69%) of V parahaemolyticus, 16.3% were positive for Kanagawa test and only one (2%) was positive for urease test. We conclude that fresh oysters had a Vibrio microbiota higher than the frozen, but frozen had the further isolation of V parahaemolyticus. Both strains of these bacteria were urease and Kanagawa positive. So, mollusks can be a risk of illness if consumed without prior cooking.

So, mollusks can be a risk of illness if consumed without prior cooking.Bactérias do gênero Vibrio são associadas com surtos epidentiológicos devido ao consumo de ostras cruas. 0 presente estudo objetivou quantificar Vibrio total, sacarose positivo e negativo, isolar e identificar V. parahaemolyticus de ostras in natura e congeladas, comercializadas na Praia do Futuro em Fortaleza, além de determinar o perfil de virulência dessas cepas, através dos testes de Kanagawa e produção de urease. Foram analisadas 300 ostras: 150 comercializadas in natura e 150 congeladas. A quantificação foi feita através da Contagem Padrão em Placas e as cepas identificadas bioquimicamente. No teste de Kanagawa, utilizou-se Agar Wagatsuma e a detecção de urease foi feita em caldo uréia contendo 1% de NaCl. As contagens de Vibrio para as ostras in natura variaram de 475 est a 36.000 UFC (Unidades Formadoras de Colônia) g4 e nas congeladas houve variação de 400 est a 26.250 UFC g-1. Foram isoladas 39 cepas (48,8%) de V. parahaemolyticus das amostras de ostra in natura, sendo que 10,2% apresentaram-se como Kanagawa positivas e uma amostra (2,6%) foi positiva, concomitantemente, para os dois testes. Das ostras congeladas, isolou-se 49 cepas (69%) de V parahaemolyticus, sendo 16,3% positivas para o teste de Kanagawa e apenas uma (2%) positiva para o teste de urease. Conclui-se que as ostras in natura possuíam uma microbiota de vibrio superior is ostras congeladas, entretanto as congeladas apresentaram um maior isolamento de V. parahaemolyticus. Ambas apresentaram cepas dessa bactéria Kanagawa e urease positivos.
