Resumo: The objective was to analyze the production and quality of cows' milk from three production units in the municipality of Porto da Folha - SE, according to the parameters established in Normative Instruction 76/2018 of the Ministério da Agricultura, Pecuária e Abastecimento. Collections were carried out between August 2019 and January 2020, making a total of five collections, in each production unit (PU), which totaled 257 samples for composition analysis, somatic cell count and total bacterial milk count. Data were submitted to analysis of variance and Tukey test to compare the averages between the productive units. Milk production per cow (kg/day) was higher in UP3 (p <0.05), with an average of 19.84 kg, compared to 17.09 kg in UP1 and 17.32 kg in UP2. The fat percentage was the same in the three UPs, with an average of 3.62%, a result that meets the minimum of 3% established by IN76/2018. The values of protein concentration were different for each UP (p <0.05), with 3.25% in UP1, 2.85 in UP2 and 3.01% in UP3, minimum requirement according to IN76 is 2.9%. There was no difference for lactose (p>0.05), but all presented a minimum of 4.3%, according to IN76. The averages of somatic cell count were higher in UP3 (787.13 x 103 SC / mL) and equal in UP 1 and 2 (307.37 and 370.31 x 103 SC/mL of milk), however UP3 showed a level of SCC higher than the maximum allowed by IN76. Finally, the total bacterial count was below the maximum limit required by the IN (300 x103 CFU / mL of milk), but the three UPs were different from each other (p<0.05), whose values were 11.78; 46.80 and 65.80 (x103 CFU / mL of milk), respectively. Production unit 3 has highest production percentage of milk constituents among the properties analyzed, but with the somatic cell count higher than the maximum required by Normative Instruction 76/2018. Thus, it is concluded that production units 1 and 2 have milk better quality.

Thus, it is concluded that production units 1 and 2 have milk better quality.Objetivou-se analisar a produção e qualidade do leite de vacas provenientes de três unidades produtivas no município de Porto da Folha - SE, em função dos parâmetros estabelecidos na Instrução Normativa 76/2018 do Ministério da Agricultura, Pecuária e Abastecimento. Foram realizadas coletas entre os meses de agosto de 2019 a janeiro de 2020, perfazendo um total de cinco coletas, em cada unidade produtiva (UP), que totalizaram 257 amostras para análise da composição, contagem de células somáticas e contagem bacteriana total do leite. Os dados foram submetidos a análise da variância e teste Tukey para comparação das médias entre as unidades produtivas. A produção de leite por vaca (kg/dia) foi maior na UP3 (p<0,05), com média de 19,84 kg, comparado aos 17,09 kg da UP1 e 17,32 kg da UP2. O percentual de gordura foi igual nas três UPs, com média de 3,62%, resultado que atende o mínimo de 3% estabelecido pela IN 76/2018. Os valores da concentração de proteína foram diferentes para cada UP (p<0,05), sendo 3,25% na UP1, 2,85 na UP2 e 3,01% na UP3, requisito mínimo da IN 76 é de 2,9%. Não houve diferença para lactose (p>0,05), mas todas apresentaram o mínimo de 4,3%, conforme IN 76. As médias de contagem de células somáticas foram superiores na UP3 (787,13 x 103 CS/mL) e iguais nas UP 1 e 2 (307,37 e 370,31 x 103 CS/mL de leite), porém a UP3 apresentou nível de CCS superior ao máximo permitido pela IN 76. Por fim, a contagem bacteriana total está abaixo do limite máximo exigido pela IN (300 x103 UFC/mL de leite), mas as três UPs foram diferentes entre si (p<0,05), cujos valores foram 11,78; 46,80 e 65,80 (x103 UFC/mL de leite), respectivamente. A unidade produtiva 3 possui maior produção e maior percentual de constituintes do leite entre as propriedades analisadas, mas com a contagem de células somáticas superior ao máximo exigido pela Instrução Normativa 76/2018.
