Resumo: This study aimed to evaluate the physical and sanitary conditions of a food and nutrition service unit of a hospital located in São Paulo. Therefore, a cross-sectional study was performed in an outsourced food and nutrition service unit. Hygienic and sanitary conditions were evaluated by a checklist. From the evaluated itens, 92.3% were in accordance with the legislation and the food and nutrition service unit has been classified in Group 1. The main inadequacies were in relation to exposure of the preparations for the consumers. Was concluded that it is important to use simple tools, such as the checklist, to identify nonconformities in a food and nutrition service unit, allowing corrective measures and promoting hygienic and sanitary control.

Para tanto, foi realizado um estudo transversal em uma UAN terceirizada. Para a avaliação das condições higienicossanitárias foi utilizado um checklist proposto para tal atividade. Dos itens checados, 92,3% estavam de acordo com a legislação, sendo que a UAN foi classificada no Grupo 1. As maiores inadequações foram em relação à exposição das preparações aos consumidores.
