Resumo: Soybean is considered one of the main Brazilian products due to its various uses and its significant participation in the international grain market. There are several industries in Brazil for processing soybeans, which are obtained as soybean meal, crude soybean oil and refined soybean oil. These products are generally intended for human consumption and animal feed. Despite the importance of soy industrialization, there are few bibliographical researches on this topic. Thus, the objective of this work is to perform a bibliographic review of soybean processing in Brazil, detailing all industrial steps, from the receipt and storage of grain, through the extraction and purification of oil, including obtaining the other products and by-products.

Geralmente, os dois primeiros destinam-se à produção de ração animal e o último à alimentação humana. A soja é considerada um dos principais produtos brasileiros devido às suas diversas formas de utilização e sua significativa participação no mercado internacional de grãos. Existe no país várias unidades industriais destinadas ao seu processamento, no entanto, trabalhos bibliográficos a respeito deste tema carecem de atualização.
