Physico-Chemical quality of minced beef marketed by the delivery system in the municipality of Niterói, RJ: A case study during the COVID-19 Pandemic

Resumo: The research aimed to evaluate the physical-chemical quality of ground beef marketed by the delivery service of two supermarkets in the municipality of Niterói in the pandemic period of Covid 19, between June 2020 and March 2021. They were selected and immediately sent to the Physical-Chemical Control Laboratory of the Veterinary Faculty of the University Federal Fluminense to carry out physical-chemical analyzes (pH, NH3, H2S, proof of cooking, filtration and cadaverine), thirty-one (n=31) samples of ground beef with change in odor and color during receipt. The results of these analyzes showed that 100% of the samples sold did not meet the quality parameters for the product. It was also found that the physical-chemical analyzes were important as confirmatory evidence of sensory changes in color and aroma, confirming the indications of product deterioration. Finally, the need for greater monitoring of the health risks of delivery systems by inspection bodies is highlighted in order to preserve the health of their users. It is also recommended that training courses in the food delivery segment be promoted by Organs responsible bodies.

Foram selecionadas e, imediatamente, encaminhadas ao Laboratório de Controle Físico Químico da faculdade de veterinária da Universidade Federal Fluminense para realização de análises físico-químicas (pH, NH3, H2S, prova de cocção, filtração e cadaverina), trinta e uma (n=31) amostras de carne moída com alteração no odor e na cor durante o recebimento. Os resultados dessas análises apontaram que 100% das amostras comercializadas não atenderam aos parâmetros de qualidade para o produto. Constatou-se ainda que as análises físico-químicas foram importantes como provas confirmatórias das alterações sensoriais de cor e aroma, ratificando os indicativos de deterioração do produto. Por fim, ressalta-se a necessidade do maior monitoramento dos riscos sanitários dos sistemas de delivery pelos órgãos de fiscalização de forma a preservar a saúde de seus usuários.
