Development of filmogenic solutions for the production of biodegradable, edible films with antioxidant activity: Systematic Review

Resumo: | Edible films and coatings are designed to protect food, increasing its shelf life. They have the potential to reduce the use of traditional synthetic polymers and maintain food quality by controlling mass transfer and improving mechanical, physical, and chemical integrity. In addition to limiting respiration in vegetables, packaging can act against enzymatic browning, lipid oxidation reactions, and reduction in the growth of pathogenic microorganisms. Thus, the objective of the present work was to elaborate a systematic review on edible biodegradable films, considering the physical stability of filmogenic solutions for the production of edible films with antioxidant activity and their characterization regarding their physicochemical and technological properties. The research focused on articles published in the last ten years, starting in 2012. From the selected papers, the inputs used in the formulations of the films and coatings, the physical modifications promoted by each biopolymer, and what were the results obtained were evaluated. Biomaterials are presented as an alternative for reducing environmental impact, replacing conventional plastic packaging with edible films and coatings applied to food, or even as primary packaging. There are several options for biodegradable films and coatings on the market, and the initial barrier to commercial adoption has already been overcome. In this way, public policies and tax incentives are suggested to increase the use of biodegradable and edible packaging and intensify consumer education, encouraging the adoption of eco-friendly packaging. |

Tienen el potencial de reducir el uso de polímeros sintéticos tradicionales y mantener la calidad de los alimentos controlando la transferencia de masa, mejorando la integridad mecánica, física y química. Además de limitar la respiración en los vegetales, los envases pueden actuar contra el pardeamiento enzimático, las reacciones de oxidación de lípidos y la reducción del crecimiento de microorganismos patógenos. Así, el objetivo del presente trabajo fue elaborar una revisión sistemática sobre películas biodegradables comestibles, considerando la estabilidad física de soluciones filmógenas para la producción de películas comestibles con actividad antioxidante y su caracterización en cuanto a sus propiedades fisicoquímicas y tecnológicas. La investigación se centró en artículos publicados en los últimos 10 años, a partir de 2012. De los artículos seleccionados se evaluaron los insumos utilizados en las formulaciones de las películas y recubrimientos, las modificaciones físicas que promueve cada biopolímero y cuáles fueron los resultados obtenidos. Los biomateriales se presentan como una alternativa para reducir el impacto ambiental, reemplazando los envases de plástico convencionales por películas y recubrimientos comestibles aplicados a los alimentos, o incluso como envase primario. Hay varias opciones para películas y recubrimientos biodegradables en el mercado, y la barrera inicial para la adopción comercial ya se ha superado. De esta forma, se sugieren políticas públicas e incentivos fiscales para aumentar el uso de envases biodegradables y comestibles, además de intensificar la educación del consumidor, incentivando la adopción de envases ecoamigables.Filmes e revestimentos comestíveis são desenvolvidos para proteger os alimentos, aumentando sua vida de prateleira. Eles têm o potencial para reduzir o uso de polímeros sintéticos tradicionais e manter a qualidade dos alimentos, controlando a transferência de massa, melhorando a integridade mecânica, física e química. Além de limitar a respiração em vegetais, as embalagens podem atuar contra o escurecimento enzimático, reações de oxidação lipídicas e redução do crescimento de microrganismos patogênicos. Dessa forma, objetivou-se com o presente trabalho, elaborar uma revisão sistemática sobre filmes biodegradáveis comestíveis, considerando a estabilidade física das soluções filmogênicas para produção de filmes comestíveis com atividade antioxidante e a caracterização dos mesmos quanto às suas propriedades físico-químicas e tecnológicas. A pesquisa focou em artigos publicados nos últimos 10 anos, a partir de 2012. A partir dos artigos selecionados, foram avaliados os insumos utilizados nas formulações dos filmes e revestimentos, as modificações físicas promovidas por cada biopolímero e quais foram os resultados obtidos. Os biomateriais se apresentam como alternativa para a redução do impacto ambiental, substituindo embalagens plásticas convencionais por filmes e revestimentos comestíveis aplicados nos alimentos, ou até mesmo como embalagem primária. Há diversas opções de filmes e revestimentos biodegradáveis no mercado, sendo que a barreira inicial à adoção comercial já foi superada.
