Research of coliforms and Escherichia coli in coconut water (Cocos nucifera L.) sold by streets in Fortaleza-CE

Resumo: | The objective of this work was to research Coliforms and Escherichia coli in coconut water sold by street vendors in the city of Fortaleza, Ceará. For this, five samples of coconut water sold by street vendors at traffic lights on busy avenues were acquired as a consumer. The samples were taken to the food analysis laboratory of a University Center to investigate the presence or absence of coliforms and Escherichia coli, using the methodology described by the Compendium of Methods for the Microbiological Examination of Foods of the American Public Health Association (APHA, 2001). It was observed that the microbiological quality of the coconut water in question reported irregularities, but with only one sample totally out of the standard. Considering the results, it is clear the need to apply good handling practices during the extraction, filling and storage of coconut water sold by street vendors so that there is more safety in the consumption of this product by the population. |

Para ello, como consumidor, se adquirieron cinco muestras de agua de coco que venden los vendedores ambulantes en los semáforos de avenidas transitadas. Las muestras fueron llevadas al laboratorio de análisis de alimentos de un Centro Universitario para investigar la presencia o ausencia de coliformes y Escherichia coli, utilizando la metodología descrita por el Compendiun of Methods for the Microbiological Examination of Foods de la American Public Health Association (APHA, 2001). Se observó que la calidad microbiológica del agua de coco en cuestión reportó irregularidades, pero con solo una muestra totalmente fuera de la norma. Considerando los resultados, es evidente la necesidad de aplicar buenas prácticas de manejo durante la extracción, llenado y almacenamiento del agua de coco que venden los vendedores ambulantes para que haya más seguridad en el consumo de este producto por parte de la población.O objetivo do trabalho foi pesquisar Coliformes e Escherichia coli em águas de coco comercializadas por ambulantes na cidade de Fortaleza, Ceará. Para isso, foram adquiridas, na qualidade de consumidor, cinco amostras de água de coco comercializada por ambulantes em semáforos de avenidas movimentadas. As amostras foram levadas ao laboratório de análises de alimentos de um Centro Universitário para pesquisar a presença ou ausência de coliformes e Escherichia coli, empregando a metodologia descrita pelo Compendiun of Methods for the Microbiological Examination of Foods da American Public Health Association (APHA, 2001). Observou-se que a qualidade microbiológica da água de coco em questão notificou irregularidades, mas com apenas uma amostra totalmente fora do padrão.
