Microbiological quality of fish thaw marketed in the City of São Luís, Maranhão

Resumo: This research aimed to analyze, through microbiological characterization, the quality of the fish thaw from three markets located in the city of São Luis-MA. The fish thaw samples were collected in three markets located in the city center of São Luis-MA and sent to the Laboratory of Microbiology of Food and Water, at the Federal University of Maranhão, Campus São Luis. The parameters analyzed were: thermotolerant coliforms, Escherichia coli, Pseudomonas aueruginosa using the Most Probable Number (NMP) technique, with differentiation tests of the thermotolerants and reducing Clostridium sulfite using the layered technique. It was found that the samples analyzed showed a variation from 1100 to 2400 NMP/100 mL in the count of thermotolerant coliforms, while Pseudomonas aueruginosa showed a variation from 29 to 2400 NMP/100 mL. Of the total samples, 43.3% were contaminated with Escherichia coli and 56.7% with reducing Clostridium sulfite. It is concluded that the thaws of the analyzed fish were considered out of the standards according to the Ordinance No. 5/2017 of the Ministry of Health because it represents a risk to the health of the population.

Las muestras de deshielo de pescado se recolectaron en tres mercados ubicados en el centro de la ciudad de São Luis-MA y se enviaron al Laboratorio de Microbiología de Alimentos y Agua de la Universidad Federal de Maranhão, Campus São Luis. Los parámetros analizados fueron: coliformes termotolerantes, Escherichia coli, Pseudomonas aueruginosa mediante la técnica del Número Más Probable (NMP), con pruebas de diferenciación de los termotolerantes y sulfito de Clostridium reductor mediante la técnica estratificada. Se encontró que las muestras analizadas mostraron una variación de 1100 a 2400 NMP / 100 mL en el recuento de coliformes termotolerantes, mientras que Pseudomonas aueruginosa mostró una variación de 29 a 2400 NMP / 100 mL. Del total de muestras, el 43,3% estaba contaminado con Escherichia coli y el 56,7% con sulfito reductor de Clostridium. Se concluye que los deshielos de los pescados analizados fueron considerados fuera de los estándares según la Ordenanza No. 5/2017 del Ministerio de Salud por representar un riesgo para la salud de la población.Esta pesquisa teve como objetivo analisar, mediante caracterização microbiológica, a qualidade do degelo de peixe de três mercados localizados na cidade de São Luis-MA. As amostras de degelo de peixe foram coletadas em três mercados localizados no centro da cidade de São Luis-MA e encaminhadas para o Laboratório de Microbiologia de Alimentos e Água, da Universidade Federal do Maranhão, Campus São Luis. Os parâmetros analisados foram: coliformes termotolerantes, Escherichia coli, Pseudomonas aueruginosa por meio da técnica do Número Mais Provável (NMP), com testes de diferenciação dos termotolerantes e Clostridium sulfito redutores utilizando-se a técnica sobre camadas. Verificou-se que as amostras analisadas apresentaram uma variação de 1100 a 2400 NMP/100 mL na contagem de coliformes termotolerantes, enquanto que Pseudomonas aueruginosa apresentou uma variação de 29 a 2400 NMP/100 mL. Do total de amostras, 43,3% estavam contaminadas com Escherichia coli e 56,7% com Clostridium sulfito redutores.
