Bioactive compounds present in olive oil and its by-products: bibliographic review

Resumo: | The objective of the study was to investigate what is being questioned by renowned researchers from all over the world, that is, to speculate on the countries that publish the most when it comes to olive oil and its derivatives, which are the largest producers, what is the quality of these products offered to the market, which are the best techniques to preserve the compounds beneficial to health, in addition to gaps that can instigate new elucidative research. It was carried out through a literature review, using the descriptors ¨Olive oil¨ and ¨Bioactives¨. The search was refined aiming only at articles as the form of the document, with publication in the years 2021 and 2022. Subsequently, the selected articles were directed to bibliometric analysis. With the 109 pre-selected articles in hand, a new refinement was carried out, analyzing 78 articles, which were categorized into five topics of most significant importance: Residues from olive oil production, the technological process of olive oil analysis, chemical parameters of different cultivars, bioactive compounds, the process of determining bioactive compounds. After a thorough analysis of all selected articles, initially referring to bioactive compounds and olive oil, and during the addition of by-products of olive oil production, one can prove the benefits of bioactive compounds, ways to better preserve them, adding to some trends of sustainability and preservation of the environment and, finally, identification of methods that can become promising: bioinformatics to predict medicinal properties and sensorial analysis corroborating with analytical and chemical techniques. |

Se llevó a cabo a través de una revisión bibliográfica, utilizando los descriptores ¨Aceite de Oliva¨ y ¨Bioactivos¨. La búsqueda fue refinada apuntando solo a artículos como la forma del documento, con publicación en los años 2021 y 2022. Posteriormente, los artículos seleccionados fueron encaminados al análisis bibliométrico. Con los 109 artículos preseleccionados en mano, se realizó un nuevo refinamiento, analizando 78 artículos, los cuales fueron categorizados en cinco temas de mayor importancia: Residuos de la producción de aceite de oliva, proceso tecnológico de análisis del aceite de oliva, parámetros químicos de diferentes cultivares, compuestos bioactivos, el proceso de determinación de compuestos bioactivos. Después de un análisis exhaustivo de todos los artículos seleccionados, inicialmente referidos a compuestos bioactivos y aceite de oliva, y durante la adición de subproductos de la producción de aceite de oliva, se pueden probar los beneficios de los compuestos bioactivos, formas de conservarlos mejor, sumándose a algunas tendencias. de sostenibilidad y preservación del medio ambiente y, por último, identificación de métodos que pueden resultar prometedores: bioinformática para predecir propiedades medicinales y análisis sensorial corroborando con técnicas analíticas y químicas.O objetivo do estudo foi investigar acerca do que está sendo questionado por renomados pesquisadores em todas as partes do mundo, ou seja, especular em relação aos países que mais publicam quando o assunto se refere a azeite e seus subprodutos, quais são os maiores produtores, qual a qualidade desses produtos oferecidos ao mercado, quais as melhores técnicas para preservar os compostos benéficos à saúde, além de lacunas que possam instigar a mais pesquisas elucidativas. Ocorreu através de revisão da literatura, utilizando os descritores ¨Azeite de Oliva¨ e ¨Bioativos¨. A pesquisa foi refinada almejando como forma de documento somente artigos, estes com publicação nos anos de 2021 e 2022. Posteriormente os artigos selecionados foram direcionados para análise bibliométrica. Em posse dos 109 artigos pré-selecionados, fez-se um novo refinamento, analisando-se então 78 artigos, os quais foram categorizados em cinco tópicos de maior importância: Resíduos da produção do azeite de oliva, processo tecnológico para análise do azeite, parâmetros químicos de diferentes cultivares, compostos bioativos, processo para determinação dos compostos bioativos.
