High hydrostatic pressure, pulsed electric fields and cold plasma in the food production chain: Principles and industrial applicability

Resumo: The search for non-thermal technologies has been gaining space in the market due to changes in consumers' eating habits and concern for preserving the environment. This technology is highly advantageous for the microbial decontamination of food products, including sporulates and pathogenic microorganisms. In this context, this review aimed at a systematic study of the literature on the main non-thermal technologies, using the databases of Science Direct and Web of Science, with the keyword “non-thermal technologies”. The selected articles were submitted for analysis using the Vosviewer software. After interpreting the density maps obtained in the software, it was noticed that the most studied non-thermal technologies, in the last five years (2015-2020), were the technologies of high hydrostatic pressure, pulsed electric field and cold plasma. The main highlights of the technologies were (i) reduction of the microbial load in the food, the cellular structure being an important factor in the inactivation of microorganisms, as well as (ii) the need for more sustainable industrial applications, demanding new technologies in the market.

Esta tecnología es muy ventajosa para la descontaminación microbiana de productos alimenticios, incluidos esporulados y microorganismos patógenos. En este contexto, esta revisión tuvo como objetivo un estudio sistemático de la literatura sobre las principales tecnologías no térmicas, utilizando las bases de datos de Science Direct y Web of Science, con la palabra clave “tecnologías no térmicas”. Los artículos seleccionados se enviaron para su análisis utilizando el software Vosviewer. Luego de interpretar los mapas de densidad obtenidos en el software, se notó que las tecnologías no térmicas más estudiadas, en los últimos cinco años (2015-2020), fueron las tecnologías de alta presión hidrostática, campo eléctrico pulsado y plasma frío. Los principales aspectos destacados de las tecnologías fueron (i) la reducción de la carga microbiana en los alimentos, siendo la estructura celular un factor importante en la inactivación de microorganismos, así como (ii) la necesidad de aplicaciones industriales más sostenibles, demandando nuevas tecnologías en el mercado.A busca por tecnologias não térmicas vem alcançando espaço no mercado devido às mudanças dos hábitos alimentares dos consumidores e a preocupação da preservação do meio ambiente. Esta tecnologia é altamente vantajosa para a descontaminação microbiana de produtos alimentícios, incluindo esporulados e micro-organismos patogênicos. Neste contexto, esta revisão objetivou um estudo sistemático da literatura sobre as principais tecnologias não térmicas, utilizando as bases de dados da Science Direct e Web of Science, com a palavra-chave “non-thermal technologies”. Os artigos selecionados foram submetidos para análise no software Vosviewer. Após interpretação dos mapas de densidade obtidos no software percebeu-se que as tecnologias não térmicas mais estudadas, nos últimos cinco anos (2015-2020), foram as tecnologias de alta pressão hidrostática, campo elétrico pulsado e plasma frio.
