Evaluation of the rest-intake index in a food and nutrition unit of a city of Maranhão

Resumo: The present study had the objective of evaluating the rest-intake index in a food and nutrition unit of a municipality of Maranhão. This is a cross-sectional study, with a quantitative approach, carried out at a University Restaurant (UK) in a municipality of Maranhão. It is observed that of the 49 commensals, 18 presented% of wastage up to 3% which is the maximum allowed to be considered a good meal, 16 students had a percentage between 3.1 and 10% and 15 students had values higher than 10%. It was concluded that the percentage of rest-ingestion in the UAN exceeded the values recommended in the literature making it necessary to carry out actions with the commensals for knowledge of their food preferences, in addition to campaigns related to waste for awareness, as well as periodic training with the employees aiming at minimizing waste and improving the quality of services.

Este es un estudio transversal con un enfoque cuantitativo, realizado en un restaurante universitario (Reino Unido) en una ciudad de Maranhão. De los 49 comensales, 18 presentaron% de desperdicio hasta el 3%, que es el máximo permitido para ser considerado una buena comida, 16 estudiantes presentaron un porcentaje entre 3.1 a 10% y 15 estudiantes presentaron valores superiores al 10%. Se concluyó que el porcentaje de ingesta de descanso en la UAN excedió los valores recomendados en la literatura, por lo que fue necesario realizar acciones con los comensales para conocer sus preferencias alimentarias, así como campañas relacionadas con los desechos para la concientización, así como capacitación periódica con empleados para minimizar el desperdicio y mejorar la calidad del servicio.O presente estudo teve por objetivo avaliar o índice resto-ingestão em uma unidade de alimentação e nutrição de um município do Maranhão. Trata-se de um estudo transversal, com abordagem quantitativa, realizado em um Restaurante Universitário (RU) de um município do Maranhão. Observa-se que dos 49 comensais, 18 apresentaram % de desperdício até 3% que é o máximo permitido para ser considerado uma boa refeição, 16 alunos apresentaram uma porcentagem entre 3,1 a 10% e 15 alunos apresentaram valores superiores a 10%.
