Resumo: This study aimed to verify the physicochemical characteristics and the quality of honey produced in the region of Barbacena -MG. The quality of honey samples was determined by evaluating the parameters moisture, reducing sugars, total acidity, hydroxymethylfurfural, diastase activity, water-insoluble solids and ash. Four samples of honey from the region of Barbacena - MG were evaluated, being acquired in local fairs and from street vendors. The analysis results indicated that the samples presented results in accordance with the standards and quality recommended by the Legislation for most parameters, only the acidity of two samples had values above the limit established in the legislation.

La calidad de las muestras de miel se determinó evaluando los parámetros humedad, azúcares reductores, acidez total, hidroximetilfurfural, actividad diastasa, sólidos insolubles en agua y cenizas. Se evaluaron cuatro muestras de miel de la región de Barbacena - MG, adquiridas en ferias locales y de vendedores ambulantes. Los resultados del análisis indicaron que las muestras presentaron resultados de acuerdo con los estándares y calidad recomendados por la Legislación para la mayoría de los parámetros, solo la acidez de dos muestras presentó valores por encima del límite establecido en la legislación.Este estudo teve por objetivo verificar as características físico-químicas e a qualidade do mel produzido na região de Barbacena - MG. A qualidade das amostras de meles foi determinada pela avaliação dos parâmetros umidade, açúcares redutores, acidez total, hidroximetilfurfural, atividade diastásica, sólidos insolúveis em água e cinzas. Foram avaliadas quatro amostras de meles da região de Barbacena - MG, sendo adquiridas em feiras locais e de vendedores ambulantes.
