Antioxidant activity of small fruits produced in the State of Rio Grande do Sul, Brazil

Resumo: The search for small fruits, for consumers, has increased in recent times due to the great research on bioactive, which brings benefits associated with the maintenance and well-being of health. With this, agro-industries have also focused on expanding the consumer market for fruit pulp. Thus, blackberry and blueberry crops gain space among other species, from the small fruits consumed in Brazil, attract the attention of consumers, fruit processors, marketing agents and, consequently, producers on a family, medium and large scale. The objective of this study was to evaluate the antioxidant activity of fresh pulp, diluted pulp and freeze-dried blackberry pulp cv. Tupy and blueberry pulp cv. Powderblue. Blackberries (Rubus fruticosus) from the cultivar cv. Tupy and blueberries (Vaccinium ashei Reade) from cv. Powderblue, both grown in the city of Morro Redondo-RS, were used. The previously frozen fruits (-18°C) were kept at room temperature until thawing, and then crushed in a blender and sieved to obtain the pulp, which were diluted with mineral water in the proportions of 50% and 75% w/v (pulp: water). The fruit was also stored and removed from the ultrafreezer (-80°C) and immediately freeze-dried, after which it was stored in polyethylene containers under freezing (-20±2°C) until the time of analysis. The antioxidant activity was determined following the method described by Brand-Willians. Therefore, it was found that the pulp -in natura of blueberry cv. Powderblue presents a greater antioxidant capacity than the blackberry cv. Tupy.

Tupy.La búsqueda de frutas pequeñas, por parte de los consumidores, se ha incrementado en los últimos tiempos debido a las grandes investigaciones sobre bioactivos, que aportan beneficios asociados al mantenimiento y bienestar de la salud. Con ello, las empresas agrícolas también se han centrado en la expansión del mercado de consumo de pulpa de fruta. Así, los cultivos de moras y arándanos ganan espacio entre otras especies, a partir de los pequeños frutos que se consumen en el Brasil, atraen la atención de los consumidores, los procesadores de frutas, los agentes de comercialización y, en consecuencia, los productores en escala familiar, mediana y grande. El objetivo de este estudio fue evaluar la actividad antioxidante de la pulpa en natura, la pulpa diluida y la pulpa liofilizada de la mora cv. Tupy y el arándano cv. Powderblue. Se utilizaron moras (Rubus fruticosus) del cultivar cv. Tupy y arándanos (Vaccinium ashei Reade) del cv. Powderblue, ambos cultivados en la ciudad de Morro Redondo-RS. Los frutos previamente congelados (-18°C) se mantuvieron a temperatura ambiente hasta su descongelación, y luego se trituraron en una licuadora y se tamizaron para obtener la pulpa, que se diluyó con agua mineral en las proporciones de 50% y 75% p/v (pulpa: agua). Las frutas también se almacenaron y sacaron del ultracongelador (-80°C) e inmediatamente se liofilizaron, tras lo cual se almacenaron en contenedores de polietileno bajo congelación (-20±2°C) hasta el momento del análisis. La actividad antioxidante se determinó siguiendo el método descrito por Brand-Willians. Por lo tanto, se verificó que la pulpa -in natura de la mora cv. Powderblue presenta mayor capacidad antioxidante que la mora cv. Tupy.A busca por pequenos frutos, por consumidores, tem aumentado nos ultimos tempos devido as grandes pesquisas sobre bioativos, que trazem benefícios associados à manutenção e bem-estar da saúde. Com isso, as agroindústrias também têm focado na expansão do mercado consumidor de polpas de frutas. Assim sendo, as culturas de amora-preta e mirtilo ganham espaço dentre outras espécies, das pequenas frutas consumidas no Brasil, despertam a atenção de consumidores, processadores de frutas, agentes comercializadores e, por consequência, por produtores em escala familiar, médio e de grande porte. O objetivo deste estudo foi avaliar a atividade antioxidante da polpa in natura, da polpa diluída e da polpa liofilizada de amora-preta cv. Tupy e de mirtilo cv. Powderblue. Foram utilizados frutos de amora-preta (Rubus fruticosus) da cultivar cv.Tupy, e mirtilos (Vaccinium ashei Reade) da cv. Powderblue, ambos cultivados na cidade de Morro Redondo-RS. Os frutos previamente congelados (-18°C) foram mantidos à temperatura ambiente até o descongelamento, e em seguida foram triturados em liquidificador e peneirados para obtenção da polpa, que foram diluidas com água mineral nas proporções de 50% e 75% p/v (polpa: água). As frutas também foram armazendas e retiradas do ultrafreezer (-80°C) e imediatamente liofilizadas, após foram armazenadas em embalagens de polietileno sob congelamento (-20±2°C) até o momento das análises. A atividade antioxidante foi determinada seguindo o método descrito por Brand-Willians. Portanto, verificou-se que a polpa -in natura de mirtilo cv. Powderblue apresenta maior capacidade antioxidante que a amora- preta cv.
