Cull cow management and its effect on performance and carcass characteristics

Resumo: | Forty-four Charolais and 28 Angus cows with age ranging from seven to eleven years were randomly distributed within each breed into four treatments: T1 - open cows; T2 - pregnant cows; T3 - spayed cows and T4 - cows with IUD (Intra-Uterine Device). The experimental period lasted 185 days, beginning in November 11, 1978 and ending in May 14, 1979. Then, all the cows were slaughtered. During the experiment all the cows remained in native pasture. The average daily gain for T1, T2, T3 and T4 was: 0.307, 0.428, 0.270 and 0.276, respectively. Pregnant cows presented a higher daily gain than the other three groups (P < 0.05). No significant difference was found in all the carcass parameters studied, athough pregnant cows displayed a thicker cover of external fat. The evaluation of tenderness even by Taste Panel or through the Warner-Bratzler shear device as well flavor, juiciness and losses during thawing and cooking process, showed small and nonsignificant differences. The results of this experiment show that the finishing period should be conducted with cows that were left open. |

The results of this experiment show that the finishing period should be conducted with cows that were left open.Foram utilizadas 44 vacas da raça Charolês e vinte e oito Aberdeen Angus com idade entre sete e onze anos, distribuídas ao acaso, dentro de cada raça, em quatro tratamentos: T1 - 23 vacas vazias (não-prenhes); T2 - 17 vacas prenhes; T3 - 20 vacas castradas; T4 -12 vacas com DIU (Dispositivo Intra-Uterino). O experimento durou 185 dias, de 11 de novembro de 1978 a 14 de maio de 1979, quando as vacas foram abatidas. Os animais permaneceram em campo natural, com as vacas vazias apresentando ganho de peso médio diário de 0,307 kg; as prenhes, de 0,428 kg; as castradas, de 0,270 kg; e as com DIU, de 0,276 kg. Houve diferença significativa, ao nível de 5%, no ganho de peso das vacas prenhes em relação às dos demais tratamentos. Nas várias características das carcaças estudadas não houve diferença significativa entre os tratamentos, embora as vacas prenhes apresentassem maior espessura de gordura subcutânea. A avaliação de maciez objetiva e subjetiva e do sabor e suculência da carne, bem como das perdas verificadas no descongelamento e cocção, apresentaram diferenças pequenas e não significativas entre os tratamentos.
