Ruminal biohydrogenation and conjugated linoleic acid (CLA) in milk of dairy goats fed with diets based on lipid sources

Resumo: When goats are fed with vegetable oils, rich in unsaturated fatty acids, these molecules can be found in their milk. However, these unsaturated acids are harmful to rumen microbes. Biohydrogenation of such substances occurs naturally in the ruminal environment, in order to reduce its harmful effect for bacteria cell membranes. However, not all unsaturated fatty acids are converted to saturated ones in the rumen, being transferred to the milk, changing its physical and chemical properties and fatty acids profile. It is also possible to improve business performance, by reducing long-chain saturated fatty acids, which are harmful to human health. Higher levels of conjugated linoleic acid (CLA) in the milk can be obtained by incorporating this substance into the animals"™ diet.

No entanto, estes ácidos insaturados são nocivos à microbiota no rúmen. Deste modo, a biohidrogenação ocorre naturalmente no ambiente ruminal, pela ação das bactérias na tentativa de diminuir seu efeito nocivo í s membranas celulares das bactérias. Porém, nem todo ácido graxo insaturado no rúmen é transformado em saturado, permitindo que o leite produzido por cabras contenha ácidos graxos insaturados, alterando as caracterí­sticas fí­sico-quí­micas e o perfil de ácidos graxos. É possí­vel também melhorar o rendimento comercial pela expectativa de redução de ácidos graxos saturados de cadeia longa, nocivos à saúde humana.
