Resumo: Eating out of home, in a food and nutrition unit, is an alternative for many people. The aim of this study was to verify the acceptability and refuse of meals by hospital workers in a dining hall. During three months, daily, all meals were weighted before leaving the kitchen and after people had eaten. The menus made by nutritionists were very accepted, with a general rate of 96,0% of acceptability and 4,9% of refuse. So, we concluded that these menus were made according to workers preference.

So, we concluded that these menus were made according to workers preference.Para uma expressiva camada da população, a refeição fora do lar, em unidades de alimentação e nutrição, é uma das alternativas viáveis e práticas. O objetivo deste estudo foi verificar a aceitabilidade e recusa das refeições servidas no refeitório dos funcionários de um hospital. Durante três meses, diariamente, todas as preparações eram pesadas antes de sair da cozinha e após o consumo dos indivíduos que freqüentavam esse refeitório. A aceitabilidade dos cardápios propostos pelas nutricionistas foi bastante elevada, beirando a totalidade, em quase todos os dias no período em estudo, com uma média geral de 96,0% de aceitabilidade e 4,0% de recusa.
