No entanto, para obter sua maxima eficiencia biocida, e necessaria sua estabilizacao, evitando sua volatilizacao, oxidacao ou degradacao. Este trabalho teve como objetivo desenvolver emulsoes Pickering a partir de tres diferentes oleos essenciais (Ho wood . linalol, cardamomo e canela), estabilizados com nanocelulose. As emulsoes foram primeiramente preparadas variando parametros de processo (screening) para verificar as condicoes que induzem maior estabilidade ao sistema. A partir do screening, foram selecionadas as amostras mais estaveis para avaliacao das interacoes e influencias das nanoceluloses com os oleos essenciais, considerando suas propriedades individuais, como estrutura quimica e polaridade, propriedades fisico-quimicas, antimicrobianas e antivirais contra o virus SARS-CoV-2. Cada oleo essencial possui um fator de processamento de maior impacto em relacao a estabilidade, verificado pelo Design de Experimentos. Os resultados indicaram que o linalol e mais influenciado em termos de indice de creme pela velocidade de homogeneizacao, enquanto para o cardamomo e a canela destacam-se a concentracao e a morfologia da nanocelulose, respectivamente. Isso mostra que a morfologia da nanocelulose determina a estabilizacao da emulsao; nanocristais de celulose (CNCs) formam emulsoes liquidas estabilizadas por interacoes eletrostaticas e nanofibras de celulose (CNFs) formam uma estrutura tridimensional (gel) por estabilizacao esterica. As estruturas quimicas dos OEs podem influenciar na estabilidade do sistema e na tensao superficial por meio de ligacoes ou interacoes quimicas, sendo que o linalol apresentou ligacoes de hidrogenio entre suas hidroxilas e a da celulose, enquanto o cardamomo demonstrou forte ligacoes da celulose com o acetato de ¿¿-terpineol e a canela nao apresentou interacoes quimicas entre os componentes, porem apresentou estabilidade devido a sua estrutura que contem um anel benzenico. A analise reologica demonstrou que as emulsoes estabilizadas com CNC possuem fluxo newtoniano, e as com CNF, pseudoplastico resultante da rede tridimensional formada pelas nanofibras de celulose. Os ensaios antimicrobianos indicaram que a influencia na atividade biocida das emulsoes dependem das estruturas quimicas dos oleos essenciais e da sua interacao quimica com a celulose, sendo que maiores interacoes diminuem a atividade bactericida. O linalol apresentou reducao significativa da atividade antimicrobiana apos a emulsificacao, sendo que, o oleo puro inibiu E. coli, S. aureus, Pseudomonas e Salmonela, enquanto as emulsoes estabilizadas com CNC somente inibiram S. aureus e as estabilizadas com CNF inibiram E. coli, S. aureus e Salmonela. Possivelmente o tipo de estabilizacao e as interacoes quimicas entre os componentes influenciaram na volatilidade do componente ativo do oleo, alterando sua acao antimicrobiana. O cardamomo diminuiu sua eficiencia antimicrobiana apos a emulsificacao com CNF, refletindo na ausencia de inibicao de Pseudomonas e diminuicao do halo de inibicao da S. aureus. As emulsoes de canela apresentaram atividade antimicrobiana similar ao oleo essencial puro, indicando que a emulsificacao nao alterou a difusividade do oleo essencial ou seu poder bacteriostatico e antiviral. Os oleos essenciais puros foram testados contra o virus SARS-CoV-2, sendo que o oleo de canela demorou apenas 5 minutos para inativar o virus, enquanto o oleo de cardamomo demorou 30 minutos e o oleo de linalol nao apresentou resultados considerando o teste empregado. As emulsoes apresentaram tendencia similar ao observado para as bacterias, exigindo maiores tempos para acao antiviral. Os resultados indicam que as emulsoes e seus oleos sao potenciais agentes ativos naturais contra bacterias e virus para serem aplicados em desinfetantes para limpeza de superficies altamente contaminadas, como hospitais, farmacias ou transporte publico.Essential oils are natural compounds that have attracted significant attention due to their excellent antibacterial, antiviral and antioxidant capacity. However, to obtain its maximum biocidal efficiency, it is necessary to stabilize it, avoiding its volatilization, oxidation, or degradation. This work aimed to develop Pickering emulsions from three essential oils (Ho wood ¿ linalool, cardamom and cinnamon), which are stabilized with nanocellulose. The emulsions were first prepared by varying the process parameters (screening) to verify the conditions that induce greater stability in the system. From the screening, the most stable samples were selected to evaluate the interactions and influences of the nanoparticles with the essential oils, considering their individual properties, such as chemical structure and polarity, physicochemical, antimicrobial, and antiviral properties against the SARS-CoV-virus. Each essential oil has a processing factor of more significant impact concerning stability, verified by the Design of Experiments. The results indicated that linalool is more influenced by a cream index by homogenization speed, while for cardamom and cinnamon, the concentration and morphology of nanocellulose stand out, respectively. This shows that the morphology of the nanocellulose determines the stabilization of the emulsion; Cellulose nanocrystals (CNCs) form liquid emulsions stabilized by electrostatic interactions, and cellulose nanofibers (CNFs) form a three-dimensional structure (gel) by steric stabilization. The chemical structures of the EOs can influence the stability of the system and the surface tension through bonds or chemical interactions, and linalool showed hydrogen bonds between its hydroxyls and that of cellulose. Cardamom showed strong bonds between cellulose and á-terpineol acetate, and cinnamon did not show chemical interactions between the components but showed stability due to its benzene ring structure. The rheological analysis showed that the emulsions stabilized with CNC have Newtonian flow, and those with CNF, a pseudoplastic resulting from the three-dimensional network formed by the cellulose nanofibers. Antimicrobial assays indicated that the influence on the biocidal activity of emulsions depends on the chemical structures of essential oils and their chemical interaction with cellulose, with interactions decreasing the bactericidal activity. Linalool showed a significant reduction in antimicrobial activity after emulsification, and the pure oil inhibited E. coli, S. aureus, Pseudomonas, and Salmonella, while CNC-stabilized emulsions only inhibited S. aureus and CNF-stabilized emulsions inhibited E. coli, S. aureus, and Salmonella. Possibly the type of stabilization and the chemical interactions between the components influenced the volatility of the oil's active component, altering its antimicrobial action. Cardamom decreased its antimicrobial efficiency after emulsification with CNF, reflecting the absence of Pseudomonas and decreased S. aureus inhibition halo. The cinnamon emulsions showed similar antimicrobial activity to the pure essential oil, indicating that the emulsification did not change the diffusivity of the essential oil or its bacteriostatic and antiviral power. Tests of pure essential oils against the SARS-CoV-2 virus were carried out, with cinnamon oil taking only 5 minutes to inactivate the virus, cardamom oil taking 30 minutes, and linalool oil did not show results considering the test employed. The emulsions showed a similar tendency to that observed for bacteria, requiring longer times for antiviral action.
