Resumo: Brazilian farming has shown a certain degree of performance in recent years, boosting production and exports. Within this scenario, large-scale agriculture stands out. Mostly, family farming has been developed in ecological systems through communities based on solidarity economy and cooperatives. An example is the production of artisanal cheeses, such as the cabacinha cheese from Santa Rita do Araguaia (GO). Cabacinha cheese from Santa Rita do Araguaia is a typical cheese from municipalities located on the border between the states of Goiás and Mato Grosso. The highlight of this product prompts the following problem question: "What are the constraints on the consumer's choice of artisanal dairy cabacinha cheese from Santa Rita do Araguaia and what is the willingness of consumers in Goiânia to pay for this product?" Considering this research question, the general objective of this dissertation is to analyze the willingness to pay, as well as its constraints, of the Goianiense consumer for the dairy cabacinha cheese from Santa Rita do Araguaia. The specific objectives are: to identify the profile of consumers in Goiânia of cabacinha cheese from Santa Rita do Araguaia; understand the consumer's purchase decision process; analyze the valuation potential of this product. The hypothesis is that consumers are willing to pay a higher price for cabacinha cheese from Santa Rita do Araguaia (GO), in relation to other cheeses, as it is an artisanal and traditional product, which highlights its historical and cultural value. This is quantitative research in the field research style, which adopts a literature review and exploratory, followed by the Random Utility and Estimation Model, with the application of closed questionnaires. As the main considerations of the research, it is possible to say that the willingness of consumers from Goianiense to pay for artisanal cabacinha cheese from Santa Rita do Araguaia (GO) is estimated to be high since a DaP of R$60.86/500g remained. In addition, among some constraints on the part of the consumer, it is worth mentioning that the choice to purchase this dairy product is based on age, place of purchase of the product and place of origin of the consumer. Although this result is heterogeneous, when considering the place of sale and the geographic origin of the consumer.

Dentro desse cenário destaca-se a agricultura de grande porte. A agricultura familiar, em sua grande maioria, tem se desenvolvido em sistemas ecológicos por meio de comunidades pautadas na economia solidária e no cooperativismo. Um exemplo é a produção de queijos artesanais, como o queijo cabacinha de Santa Rita do Araguaia (GO). O queijo cabacinha de Santa Rita do Araguaia é um queijo típico de municípios situados na faixa da fronteira entre os estados de Goiás e Mato Grosso. O destaque desse produto incita a seguinte pergunta problema: “Quais os condicionantes da escolha pelo lácteo artesanal queijo cabacinha de Santa Rita do Araguaia por parte do consumidor e qual a disposição dos consumidores em Goiânia a pagar por este produto?” Considerando essa questão de pesquisa, o objetivo geral desta dissertação é analisar a disposição a pagar e seus condicionantes, do consumidor goianiense pelo lácteo queijo cabacinha oriundo de Santa Rita do Araguaia. Os objetivos específicos são: identificar o perfil dos consumidores em Goiânia do queijo cabacinha oriundo de Santa Rita do Araguaia; compreender o processo de decisão de compra desse consumidor; analisar o potencial de valorização deste produto. Lança-se a hipótese que os consumidores têm disposição a pagar um valor maior pelo queijo cabacinha de Santa Rita do Araguaia (GO), em relação a outros queijos, por ser um produto artesanal e tradicional, que evidencia seu valor histórico e cultural. Esta é uma pesquisa quantitativa no estilo pesquisa de campo, que adota revisão da literatura e exploratória, seguida do modelo de Utilidade Aleatória e Estimação, com aplicação de questionários fechados. Como principais considerações da pesquisa é possível dizer que a disposição dos consumidores Goianiense a pagar pelo queijo cabacinha artesanal de Santa Rita do Araguaia (GO) é estimada como alta, visto que ficou uma DaP de R$60.86/500g. Além disso, entre alguns condicionantes por parte do consumidor destaca-se que a escolha pela compra desse lácteo se estabelece pela idade, local da compra do produto e local de origem do consumidor.
