Defesa: Curitiba, 21/06/2012Bibliografia: fls. 213-256Resumo: Estudar a história dos restaurantes self-service por quilo é, além de um marco na transição alimentar, uma focagem brasileira dos processos de alimentação rápida, sempre atrelada aos critérios de se comer do melhor, com fartura, pelo menor preço, no menor tempo, do manter o tradicionalismo familiar e alimentar, da civilidade e da comensalidade. Compreender as relações entre as pessoas e os alimentos, focalizando as refeições feitas fora dos limites domésticos e as possibilidades de se fazer refeições fora de casa permitem novas interpretações do comer. A modalidade do comer fora, a partir do surgimento dos serviços a quilo, possibilitou à população maior acesso aos alimentos servidos por restaurantes comerciais e, portanto, gerando uma intensa busca pelos mesmos. Comer fora passou a ser, em muitas situações, mais barato do que produzir os alimentos dentro de casa, agregou variedade e fartura, com praticidade, e muitos consumidores, cada vez mais exigentes e com poder aquisitivo distinto, fizeram do comer fora não só uma opção para refeições durante os seus dias de trabalho, mas em todos os dias de suas vidas. Comer fora tem representado um processo contínuo nesta nova sociedade do trabalho, onde tempo é dinheiro. Com base nisso, este estudo analisa os restaurantes comerciais de Curitiba, especialmente os self-services por quilo, durante o período de 1970 a 2000, através dos relatos de proprietários, gerentes e consumidores dos mesmos. Nas fontes escritas, buscamos a compreensão de dados, lugares, cenas, situações políticas e econômicas das diferentes épocas do estudo, a fim de traçar o perfil da sociedade em diferentes percepções temporais.Abstract: The study of the history of the buffet style, price per kilo restaurants in Brazil is an important point in recent changes to eating habits. Furthermore, it also represents a Brazilian view on fast food associated to the criteria of eating the best food, in abundance, at the lowest price, the shortest time, keeping family and food traditions, good manners and the costume of eating together. The comprehension of the relation between people and foods, focusing on meals ate outside of home and the possibilities of eating outside of home, allows new interpretations of the meanings of eating. With the creation of price per kilo restaurants allowed the population greater access to commercial restaurants and therefore generating greater demand for them. Eating out often became cheaper than cooking meals at home, it brought greater variety and abundance of food and practicality. Many consumers, who were more demanding and had a better income, opted to eat at restaurants not only on working days, but every day of their lives. Eating out represents a continuous process in this new working society in which time is money. With this background the present study analyses the commercial restaurants of the city of Curitiba, specifically the buffet price per kilo style, from 1970 to the year 2000, using accounts from owners, managers and consumers about them. The study of the written sources was performed emphasizing the data, places, scenes and political and economic situations of the several periods in order to describe the profile of the society in different time frames.257f. : il.
