Resumo: | The growing global demand for fish has led to a significant expansion of aquaculture has been growing at a rapid pace throughout the world. With the growth of activity, also increased the concerns related to the production, and its sustainability, especially with regard to food safety. Currently, food safety continues as one of the major concerns that the seafood industry is facing and is a key element to ensure food and nutrition security worldwide. The certification consists of one of the tools market potential based to minimize negative impacts involved in aquaculture production and thus increase consumer confidence by ensuring the production of quality fish. It is this context the Certification Program of Brazilian Fish (PCPB) is being developed, which aims to ensure the quality of fish as food safe as well as the sustainability of its production. The work aimed to identify the success factors in shrimp and tilapia culture in Brazil, in order to support the development of PCPB in order to ensure food safety through sustainable production systems. To this, the research was conducted in the form of case study. Initially we studied the major national and international references for relevant sustainable certification and regulations for shrimp and tilapia culture. Through the identification of the main management practices adopted against these references were developed checklists that were applied during visits to shrimp and tilapia farms in the states of Rio de Janeiro, Esp?rito Santo and Rio Grande do Norte. Furthermore, two workshops were held involving stakeholders in the sector to identify needs. The study reveals a lack of transparency and the need to address the lack of controls on the production and organization in all aspects covered: Documentation, Environment, Health and Animal Welfare, Food Safety, Social Responsibility and Safety. The main opportunities for improvement were related to the management of the enterprise, animal health programs, training of staff in good management practices, personal hygiene, animal welfare, environmental education and safety. |

Com o crescimento da atividade, aumentam tamb?m as preocupa??es relacionadas ? produ??o, sua sustentabilidade e, principalmente no que diz respeito ? seguran?a do alimento. Na atualidade, a inocuidade dos alimentos segue como uma das principais preocupa??es que a ind?stria de pescado enfrenta e constitui um elemento fundamental para garantir a seguran?a alimentar e nutricional a n?vel mundial. A certifica??o consiste em uma das ferramentas de mercado em potencial, como base para minimizar os impactos negativos envolvidos na produ??o aqu?cola e assim aumentar a confian?a dos consumidores, garantindo a produ??o do pescado com qualidade. ? neste contexto que j? vem sendo desenvolvido o Programa de Certifica??o do Pescado Brasileiro (PCPB), que tem como objetivo garantir a qualidade do pescado como alimento seguro, bem como a sustentabilidade de sua produ??o. O trabalho realizado teve como objetivo identificar os fatores de sucesso na carcinicultura e tilapicultura brasileiras, com vistas a subsidiar o desenvolvimento do PCPB, de forma que garanta o alimento seguro, atrav?s de sistemas de produ??o sustent?veis. Para isto, a presente pesquisa foi conduzida sob a forma de Estudo de Caso. Inicialmente foram estudados os principais referenciais nacionais e internacionais para certifica??o sustent?vel e regulamentos, pertinentes ? carcinicultura e tilapicultura. Atrav?s da identifica??o das principais pr?ticas de manejo adotadas frente a estes referenciais foram elaborados check lists que foram aplicados durante visitas ? fazendas de camar?o e til?pia nos estados do Rio de Janeiro, Esp?rito Santo e Rio Grande do Norte. Al?m disso, foram realizadas duas oficinas envolvendo partes interessadas do setor, para identifica??o de demandas. O estudo revelou a falta de transpar?ncia e a necessidade de suprir a falta de controles e organiza??o na produ??o em todos os aspectos abordados: Documenta??o, Meio Ambiente, Sa?de e Bem-Estar Animal, Seguran?a do Alimento e, Responsabilidade Social e Seguran?a do Trabalho.
