Resumo: | The effect of technological levels of production systems and seasons in the microbiological (somatic cell count and total bacterial count) and chemical quality of milk (fat, protein, nutraceutical potentiality in relation to the fatty acids profile and pesticides) was evaluated. Through multivariate statistical techniques, it was reduced dimensionality of 1,541 units producing milk (UPM) for the 15 municipalities in the Rio Grande do Sul, Brazil, 15 homogeneous groups and evaluated three UPL per quadrant of the Cartesian plane, in different seasons, which were characterized in four levels of specialization: highly specialized, specialized, partially specialized, and not specialized. After, milk samples from each farm were collected for analysis of microbiological quality and milk chemistry, including the fatty acid profile and index for evaluating the quality lipid fraction, especially the index proposed by the study, called nutraceutical index (NI); and also, the safety of the milk in respect of 93 pesticide residues and efficacy of degradation or elimination of these pesticides front of industrial heat treatments. The production systems and the seasons jointly interfere in the fatty acids profile, and singly interfere in chemical and microbiological quality of the milk. The lowest somatic cell count and the highest protein content were observed in summer, and the specialization level of production units had inverse relationship with total bacterial count. During winter, not specialized systems produced milk with the best nutraceutical index, with the highest values of polyunsaturated fatty acids, rumenic acid (CLA, 18:2n7 - c9, t11) and t10, c12 octadecadienoic acid (CLA, 18:2n6 t10, c12). In addition, with increasing levels of specialization of UPM and especially in the spring, summer and autumn were increased agrochemical residue levels in the milk. However, the industrial heat treatments were effective to degrade or eliminate the pesticides present in refrigerated raw milk, highlighting the importance of these different binomials of time and temperature for the safety of the milk consumed. |

However, the industrial heat treatments were effective to degrade or eliminate the pesticides present in refrigerated raw milk, highlighting the importance of these different binomials of time and temperature for the safety of the milk consumed.Foi avaliada a influência de níveis tecnológicos de sistemas de produção e estações do ano na qualidade microbiológica (contagem de células somáticas e contagem bacteriana total) e química do leite (gordura, proteína, potencialidade nutracêutica em relação ao perfil de ácidos graxos e agrotóxicos), além de avaliar a eficiência dos tratamentos térmicos industriais (pasteurização e ultrapasteurização) na degradação ou eliminação dos agroquímicos presentes no leite cru refrigerado. Através de técnicas estatísticas multivariadas, reduziu-se a dimensionalidade de 1.541 unidades produtoras de leite (UPL) referentes a 15 municípios do Rio Grande do Sul, Brasil, a 15 grupos homogêneos, sendo avaliadas três UPL por quadrante do plano cartesiano, nas distintas estações climáticas, as quais foram caracterizadas em quatro níveis de especialização: altamente especializado, especializado, semiespecializado e não especializado. Posteriormente foram coletadas amostras de leite de cada propriedade, para análise da qualidade microbiológica e química do leite, incluindo o perfil de ácidos graxos e índices de avaliação da fração lipídica, destacando-se o índice proposto pelo estudo, denominado índice nutracêutico (IN); e ainda, à inocuidade do leite em relação a 93 resíduos de agrotóxicos e a eficácia de degradação ou eliminação destes praguicidas frente aos tratamentos térmicos industriais. Através dos resultados deste estudo, observa-se que os sistemas de produção e as estações do ano interferem de forma conjunta no perfil de ácidos graxos, e de forma isolada na qualidade química e microbiológica do leite. As maiores contagens de células somáticas e os menores conteúdos de proteína foram observados no verão, e o grau de especialização das unidades produtivas esteve indiretamente relacionado com a contagem bacteriana total no leite. No inverno, sistemas não especializados produziram leite com melhor IN, com os maiores teores de ácidos graxos poli-insaturados, ácido rumênico (CLA, 18:2n7 - c9, t11) e ácido t10,c12-octadecadienoico (CLA, 18:2n6 t10, c12). Em adição, com a elevação dos níveis de especialização das UPL e principalmente na primavera, verão e outono aumentaram-se os valores de resíduos de agroquímicos no leite.
