Resumo: Hatchery management and sanitation are essential to supply healthy chicks to meet the demands of the growing market, and one of the most important points in this process is the hatchery. Poor hygiene in the hatchery results in an increase in the number of contaminated eggs and chicks, which reduces hatch rates and increase mortality. Therefore proper disinfecting techniques and agents should be carried out with attention. The most common disinfectant used in the poultry industry is liquid formalin. However, several countries have restricted the use formalin so alternative disinfectants are required. Previous research has demonstrated that copper has antimicrobial properties. Studies demonstrate that under conditions of exposure to dry, copper has antimicrobial efficacy in a few minutes and when on wet surfaces in a few hours. The objectives of this thesis were: to review the antimicrobial properties of copper and their mechanisms of action and to evaluate the possibility of introducing such surfaces in veterinary medicine; to evaluate its ability to inactivate microorganisms (bacteria and fungi) present in commercial hatcheries; develop hatching baskets with antimicrobial properties by the use of copper; evaluate antimicrobial functionality and efficacy trays in commercial hatcheries. In view of the various antibacterial, antifungal and antiviral properties found, it is possible to infer the amount of benefits that copper must bring to veterinary medicine, both in animal production and in food safety and public health. Based on the results obtained, it was demonstrated the antimicrobial activity of copper against microorganisms existing in hatchery broiler environments. The copper plates were able to eliminate in the laboratory almost all contamination of their surface (105 Mesophilic Colony Forming Units and mold/yeast) in just 24 hours. The prototypes produced were considered adequate, because they fitted perfectly in the plastic trays and resisted cleaning procedures without causing locomotion problems to the chicks and no adverse effects were observed. When comparing only the treatments with the basket cast, the average counts of mesophilic, Escherichia coli and molds and yeasts reduced in contact with the copper. Future studies are required to determine the optimal prototype of the delivery basket and make it a commercial product.

A falta de boas condições de higiene nesse local acarreta um incremento no número de ovos e pintos contaminados, o que provocará uma redução na eclosão e aumento no percentual de descarte de pintainhos. A limpeza dos equipamentos e da sala de nascimento dos pintainhos deve ser realizada com muita atenção. Existem algumas alternativas para desinfecção e vários tipos de desinfetantes, porém a mais utilizada é realizada com formol líquido. No entanto, tem-se buscado alternativas para a sua substituição, já que seu uso é restrito em diversos países. Uma alternativa para o controle da contaminação nos incubatórios é o uso do cobre como antimicrobiano. Estudos demonstram que em condições de exposição à seco, o cobre tem eficácia antimicrobiana em poucos minutos e quando em superfícies úmidas, em algumas horas. Os objetivos desta tese foram: revisar as propriedades antimicrobianas do cobre e seus mecanismos de ação e avaliar a possibilidade de introdução de tais superfícies na medicina veterinária; testar a capacidade do cobre de inativar os micro-organismos (bactérias e fungos) presentes em incubatórios comerciais; desenvolver bandejas de eclosão com propriedades antimicrobianas pelo do uso do cobre; avaliar a funcionalidade e eficácia antimicrobiana das bandejas em incubatórios comerciais. Tendo em vista as diversas propriedades antibacterianas, antifúngicas e antivirais encontradas, pode-se inferir a quantidade de benefícios que o cobre deve trazer para a medicina veterinária, tanto na produção animal quanto em segurança dos alimentos e saúde pública. Com base nos resultados obtidos, ficou demonstrada a atividade antimicrobiana do cobre frente a micro-organismos existentes em ambientes de incubatórios de frangos de corte. As placas de cobre foram capazes de eliminar em laboratório quase toda a contaminação de sua superfície (105 Unidades Formadoras de Colônias de mesófilos e bolores/leveduras) em apenas 24 horas. Os protótipos produzidos foram adequados, pois se encaixaram perfeitamente às bandejas de plástico, resistiram à higienização, não causaram problemas para a locomoção dos pintainhos e nenhum efeito adverso foi observado. Quando comparados somente os tratamentos com as bandejas vazadas, as contagens médias de mesófilos, Escherichia coli e bolores e leveduras reduziram em contato com o cobre.
