Influence of storage under controlled temperature the physical characteristics of jujube fruits (Ziziphus joazeiro Mart.)

Resumo: | Ziziphus joazeiro Mart. is a typical species from the Northeast of Brazil, which produces fruits rich in ascorbic acid and a high concentration of phenolic compounds, requiring research on the post-harvest storage of its fruits, in order to intensify its consumption, industrialization and commercialization. Thus, the objective was to evaluate the influence of storage under controlled temperature on the physical characteristics of juazeiro fruits. The ripe fruits were harvested from plants located at the Center for Science and Agrifood Technology, Federal University of Campina Grande, Campus Pombal/PB. After selection, classification, removal of dirt, removal of the peduncle and packaging, the fruits were subjected to storage at controlled temperature (24.5 ± 0.5 °C and 33.5 ± 0.5% RH), for 4 days. On all storage days, analysis of physical characteristics (fresh mass, loss of fresh mass, longitudinal and transverse lengths, thickness, yield, firmness and humidity) was performed. The results indicate that storage affected most of the characteristics studied in this research and when compared to previous studies, it is clear that the attack of the pest on juazeiros, at the time of this work, affected both flowering and fruit development. |

Es una especie típica del noreste de Brasil, que produce frutas ricas en ácido ascórbico y una alta concentración de compuestos fenólicos, que requiere investigación sobre el almacenamiento de sus frutas después de la cosecha, para intensificar su consumo, industrialización y comercialización. Por lo tanto, el objetivo fue evaluar la influencia del almacenamiento a temperatura controlada en las características físicas de los frutos de juazeiro. Las frutas maduras se cosecharon de plantas ubicadas en el Centro de Ciencia y Tecnología Agroalimentaria, Universidad Federal de Campina Grande, Campus Pombal/PB. Después de la selección, clasificación, remoción de suciedad, remoción del pedúnculo y empaque, las frutas fueron sometidas a almacenamiento a temperatura controlada (24.5 ± 0.5 °C y 33.5 ± 0.5% HR), durante 4 días. En todos los días de almacenamiento, se realizó un análisis de las características físicas (masa fresca, pérdida de masa fresca, longitudes longitudinales y transversales, espesor, rendimiento, firmeza y humedad). Los resultados indican que el almacenamiento afectó a la mayoría de las características estudiadas en esta investigación y, en comparación con estudios anteriores, está claro que el ataque de la plaga en los juazeiros, en el momento de este trabajo, afectó tanto la floración como el desarrollo de la fruta.Ziziphus joazeiro Mart. é uma espécie típica do Nordeste brasileiro, que produz frutos ricos em ácido ascórbico e alta concentração de compostos fenólicos, necessitando de pesquisas sobre o armazenamento pós-colheita de seus frutos, para intensificar seu consumo, industrialização e comercialização. Dessa forma, objetivou-se avaliar a influência do armazenamento sob temperatura controlada nas características físicas de frutos de juazeiro. Os frutos maduros foram colhidos de plantas localizadas no Centro de Ciências e Tecnologia Agroalimentar, Universidade Federal de Campina Grande, Campus Pombal/PB. Após a seleção, classificação, remoção de sujidades, retirada do pedúnculo e embalagem, os frutos foram submetidos ao armazenamento em temperatura controlada (24,5±0,5 °C e 33,5±0,5% UR), durante 4 dias. Em todos os dias de armazenamento, realizaram-se análise de características físicas (massa fresca, perda de massa fresca, comprimentos longitudinal e transversal, espessura, rendimento, firmeza e umidade).
