Microbiological quality of chilled raw milk

Resumo: Aiming at the Italac Food quality standard, where its products are in more than twenty thousand points of sale in the country and for the benefit of the community in partnership with the university, the quality of the raw material that arrives directly from the producer in the industry was evaluated. The objective of this work was to analyze the microbiological quality of raw milk in 27 tanks between manual and mechanical milking in rural properties in the municipality of Rolim de Moura - RO. The samples were analyzed using the most likely number (NMP) method. The results revealed that 100% of the samples were positive for total coliforms and 60% for thermotolerant coliforms. With significant difference between the types of milking, where 50% of the mechanical milking samples were negative for E. coli, in the manual milking only 17.64% were negative, showing the need for greater quality control and guidance to the producer on best hygiene techniques.

El objetivo de este trabajo fue analizar la calidad microbiológica de la leche cruda en 27 tanques entre ordeño manual y mecánico en propiedades rurales del municipio de Rolim de Moura - RO. Las muestras se analizaron utilizando el método del número más probable (NMP). Los resultados revelaron que el 100% de las muestras fueron positivas para coliformes totales y el 60% para coliformes termotolerantes. Con diferencia significativa entre los tipos de ordeño, donde el 50% de las muestras de ordeño mecánico resultaron negativas para E. coli, en el ordeño manual solo el 17,64% fueron negativas, evidenciando la necesidad de un mayor control de calidad y orientación al productor sobre mejores técnicas de higiene.Visando o padrão de qualidade Italac Alimentos, onde seus produtos estão em mais de vinte mil pontos de vendas no país e em prol da comunidade em parceria com a universidade foi avaliado a qualidade da matéria prima que chega direto do produtor na indústria. O objetivo nesse trabalho foi analisar a qualidade microbiológica do leite cru em 27 tanques entre ordenha manual e ordenha mecânica em propriedades rurais do município de Rolim de Moura - RO. As amostras foram analisadas pelo método do número mais provável (NMP). Os resultados revelaram que 100% das amostras foram positivas para coliformes totais e 60% para coliformes termotolerantes.
