The consumption of food on the beaches is a common habit among residents and tourists. This habit, however, can pose a risk to the health of the population if the preparation infrastructure is precarious, food handling is inadequate and there is a lack of maintenance of storage temperatures and exposure of food for sale. The objective of this research was to develop a checklist and evaluate the hygienic-sanitary conditions of street vendors who sell food in handcarts on the edge of Santos. For this, a checklist was standardized based on the federal legislation RDC 216/2004 and on the state Ordinance CVS 5 of 2013 and applied randomly. The results obtained demonstrate that all the ambulant cars observed had failures related to the production of safe food, with gaps related to the handler, the installation or the food.
