Resumo: The production chains of animal proteins have evolved and adapted to niches of offers and demands on the world stage. The prerogatives of meat production and processing demanded, over time, animal welfare standards, good manufacturing practices, classification and typification of carcasses. Each species adjusts with respect to these pre and production protocols, with their bottlenecks and adjustments, as well as their procedures that change when assessing carcass quality and typification. The intention goes beyond meeting various types of regulations throughout the world, as well as consumer demands and market requirements. When it comes to the main animal proteins consumed, pork, beef and poultry, several main niches are evaluated: the Brazilian niche for domestic consumption and the different export niches. Based on this, the objective was to review the rules of pre-production, production, animal welfare guidelines as well as classification and classification of the carcass of swine, bovine and poultry species.

Las prerrogativas de la producción y el procesamiento de la carne exigieron, con el tiempo, estándares de bienestar animal, buenas prácticas de fabricación, clasificación y tipificación de canales. Cada especie se ajusta con respecto a estos protocolos de pre y producción, con sus cuellos de botella y ajustes, así como sus procedimientos que cambian al evaluar la calidad y tipificación de la canal. La intención va más allá de cumplir con varios tipos de regulaciones en todo el mundo, así como las demandas de los consumidores y los requisitos del mercado. En cuanto a las principales proteínas animales consumidas, porcino, vacuno y avícola, se evalúan varios nichos principales: el nicho brasileño de consumo interno y los diferentes nichos de exportación. En base a esto, el objetivo fue revisar las reglas de preproducción, producción, lineamientos de bienestar animal, así como la clasificación y clasificación de las canales de las especies porcina, bovina y avícola.As cadeias produtivas de proteínas animais têm evoluído e se adequado a nichos de ofertas e demandas no cenário mundial. As prerrogativas de produção e processamentos de carnes exigiram ao longo do tempo normas de bem-estar animal, boas práticas de fabricação, classificação e tipificação de carcaças. Cada espécie se ajusta com relação a esses protocolos de pré e produção, com seus gargalos e ajustes, bem como seus procedimentos que se alteram no momento de avaliação de qualidade e tipificação de carcaças. O intuito vai além de atender a vários tipos de normatizações ao longo do mundo, bem como demandas de consumidores e exigências de mercado. Quando se trata das principais proteínas animais consumidas, de suíno, bovino e de aves, se avaliam diversos nichos principais: o nicho brasileiro para consumo interno e os diferentes nichos de exportação. Com base nisso, objetivou-se revisar as normas de pré-produção, produção, diretrizes de bem-estar animal bem como classificação e tipificação de carcaça das espécies suínas, bovinas e aves.
