Resumo: The food offered to schoolchildren should include quantitative and qualitative aspects for the fulfillment of its purpose. In this context, meals produced in school kitchens must be performed within strictly hygienic sanitary criteria. Therefore, the present study aimed to analyze the good practices related to food production in school feeding and nutrition units in a municipality in the state of Sao Paulo. Data were collected through the application via check list. The study was conducted throughout 2017 in six municipal schools. The evaluated locals had a mean score of 48.51%, being thus categorized within a high sanitary risk. Given this, the schools evaluated did not meet the necessary requirements, putting at risk the food available to the students.

Dentro de ese contexto, las comidas producidas en las cocinas de las escuelas deben ser ejecutadas dentro de criterios rigurosos desde el punto de vista higiénico sanitario. Por ello, el presente estudio tuvo como objetivo analizar las buenas prácticas referentes a la producción de alimentos en las unidades de alimentación y nutrición escolares en un municipio ubicado en el estado de São Paulo. Los datos se reunieron a través de la aplicación de check list. El estudio se realizó a lo largo de 2017 en seis escuelas municipales. Los locales evaluados presentaron un promedio de puntuación del 48,51%, estando así categorizados como "riesgo sanitario alto". Por lo tanto, las escuelas analizadas no atendieron los requisitos necesarios poniendo en riesgo la alimentación disponible a los escolares.A alimentação oferecida aos escolares deve contemplar aspectos quantitativos e qualitativos importantes para o cumprimento de sua finalidade. Dentro desse contexto, as refeições produzidas nas cozinhas das escolas devem ser executadas dentro de critérios rigorosos do ponto de vista higiênico sanitário. Diante disso, o presente estudo objetivou analisar as boas práticas referentes à produção de alimentos nas unidades de alimentação e nutrição escolares em um município localizado no estado de São Paulo. Os dados foram reunidos por meio da aplicação de check list. O estudo foi realizado ao longo de 2017 em seis escolas municipais. Os locais avaliados apresentaram uma média de pontuação de 48,51%, estando assim categorizadas como “risco sanitário alto”.
