Resumo: This work aimed to evaluate the quality of seven samples of honeys sold in open markets in the city of Rio Verde - GO. Through the study it was possible to indicate if there was any form of adulteration, such as the addition of liquids, the presence of starch and overheating. The analyzes to verify authenticity were based on the reactions of Fiehe, Lund and Lugol. The results showed that 100% of the samples were at least one of the adulteration reactions. It was also observed that the samples were in disagreement with the current legislation due to the packaging in incorrect packaging and inadequate presentation of the label and / or not having a label. The result of this work demonstrates the need for greater inspection and awareness of the population about fraud.

A través del estudio fue posible indicar si hubo alguna forma de adulteración, por ejemplo, la adición de líquidos, la presencia de almidón y el sobrecalentamiento. Los análisis para verificar la autenticidad se basaron en las reacciones de Fiehe, Lund y Lugol. Los resultados mostraron que el 100% de las muestras fueron al menos una de las reacciones de adulteración. También se observó que las muestras estaban en desacuerdo con la legislación actual debido al empaquetado en un empaque incorrecto y a la presentación inadecuada de la etiqueta y / o no tener una etiqueta. El resultado de este trabajo demuestra la necesidad de una mayor inspección y conciencia de la población sobre el fraude.Este trabalho teve como objetivo avaliar a qualidade de sete amostras de méis comercializadas em feiras livres na cidade de Rio Verde – GO. Através do estudo foi possível indicar se houve alguma forma de adulteração, como por exemplo, a adição de líquidos, presença de amido e superaquecimento. As análises para verificação de autencidade basearam-se nas reações de Fiehe, Lund e Lugol. Os resultados demonstraram que 100% das amostras foram pelo menos uma das reações de adulteração. Observou-se também, que as amostras estavam em desacordo com a legislação vigente devido ao acondicionamento em embalagens incorretas e apresentação inadequada do rótulo e/ou não apresentar rótulo.
