Detection of antimicrobial agents in UHT milk

Resumo: Milk is a food rich in nutrients and widely consumed, playing a very important role for human consumption. The occurrence of antibiotic residues in milk can cause serious risks to the health of consumers and also damage to the dairy industry. Considered as the main critical point of control of chemical contamination, the presence of antibiotic residues in milk must be observed during the reception of the raw material in the industry. The matter requires a lot of attention and has been the subject of constant concern by health authorities. Thinking about the risks to the consumer and public health, the objective of this work was to evaluate the occurrence of antibiotic residues in samples of UHT whole milk from 14 different brands under Federal Inspection marketed in the main retail establishments in the municipality of Rio Verde - GO. The samples were acquired between the months of July and August 2017 and the SNAP® Beta-Lactam ST Plus rapid test was used to perform the analyzes, according to the sensitivity of the test for the detection of antibiotic residues in the beta group. -lactamics, including cephalexin. Of the total of 40 samples analyzed, none were positive for the presence of antibiotic residues. The results obtained demonstrate the commitment of those involved in the milk production and processing chain to the safety of the food offered to consumers and to the legislation in force, which considers milk contaminated with antibiotic residues as inappropriate for human consumption.

La presencia de residuos de antibióticos en la leche puede causar serios riesgos para la salud de los consumidores y también dañar la industria láctea. Considerado como el principal punto crítico de control de la contaminación química, se debe observar la presencia de residuos de antibióticos en la leche durante la recepción de la materia prima en la industria. El asunto requiere mucha atención y ha sido objeto de constante preocupación por parte de las autoridades sanitarias. Pensando en los riesgos para el consumidor y la salud pública, el objetivo de este trabajo fue evaluar la presencia de residuos de antibióticos en muestras de leche entera UHT de 14 marcas diferentes bajo Inspección Federal comercializadas en los principales establecimientos minoristas del municipio de Río Verde - GO. Las muestras se adquirieron entre los meses de julio y agosto de 2017 y se utilizó la prueba rápida SNAP® Beta-Lactam ST Plus para realizar los análisis, de acuerdo con la sensibilidad de la prueba para la detección de residuos de antibióticos en el grupo beta-lactámicos, incluida la cefalexina. Del total de 40 muestras analizadas, ninguna fue positiva para la presencia de residuos de antibióticos. Los resultados obtenidos demuestran el compromiso de los involucrados en la cadena de producción y procesamiento de leche con la inocuidad de los alimentos ofrecidos a los consumidores y con la legislación vigente, que considera que la leche contaminada con residuos de antibióticos es inapropiada para el consumo humano.O leite é um alimento rico em nutrientes e muito consumido desempenhando papel de grande importância para a alimentação humana. A ocorrência de resíduos de antibióticos no leite pode causar sérios riscos à saúde dos consumidores e também prejuízos para a indústria de laticínios. Considerada como o principal ponto crítico de controle de contaminação química, a presença de resíduos de antibióticos no leite deve ser observada durante a recepção da matéria prima na indústria. O assunto requer bastante atenção e vêm sendo alvo de preocupação constante por parte das autoridades sanitárias. Pensando nos riscos para o consumidor e para a saúde pública, objetivou-se com este trabalho avaliar a ocorrência de resíduos de antibióticos em amostras de leite UHT integral de 14 diferentes marcas sob Inspeção Federal comercializadas nos principais estabelecimentos varejistas do município de Rio Verde – GO. As amostras foram adquiridas entre os meses de julho e Agosto de 2017 e para a realização das análises utilizou-se o teste rápido SNAP® Beta-Lactam ST Plus de acordo com a sensibilidade do mesmo para a detecção de resíduos de antibióticos do grupo dos beta-lactâmicos, incluindo a cefalexina. Do total de 40 amostras analisadas nenhuma foi positiva para a presença de resíduos de antibióticos.
