Resumo: | Rosmarinus officinalis L. is a plant grown in several regions, popularly known as rosemary, it has different therapeutic properties due to its chemical diversity associated with bioactive molecules and its phenolic compounds, providing certain curative and/or prophylactic effects such as antioxidant, anti-inflammatory, calming action. , antimicrobial and even hepatoprotective given the above, this research aims to make a quality and microbiological analysis of the processed and dehydrated herb (rosemary) obtained at the ver-o-peso market, city of Belém-PA, through the qualitative method, determination of foreign material, loss of desiccation, microscopic and phytochemical analysis based on the Brazilian Pharmacopeia. The results of organoleptic analysis and foreign material showed characteristic of rosemary and small contaminants such as stones and hair, microscopic analysis identified the presence of microorganisms with morphological characteristics suggestive of fusarium sp, iodamoeba cyst and bacteria, phytochemical analyzes were positive for flavonoids, tannins and saponins, the benefits of using rosemary are still investigated, however research on quality is still little explored despite its market potential. |

Los resultados del análisis organoléptico y material extraño mostraron contaminantes característicos del romero y pequeños como piedras y pelo, el análisis microscópico identificó la presencia de microorganismos con características morfológicas sugestivas de fusarium sp, quiste de iodamoeba y bacterias, los análisis fitoquímicos fueron positivos para flavonoides, taninos y saponinas, los beneficios del uso de romero aún se investigan, sin embargo, la investigación sobre la calidad aún se explora poco a pesar de su potencial de mercado.Rosmarinus officinalis L. é uma planta cultivada em várias regiões sendo conhecida popularmente como alecrim, apresenta distintas propriedades terapêuticas devido a sua diversidade química associada a moléculas bioativas e seus compostos fenólicos propiciando certos efeitos curativos e/ou profiláticos como, ação antioxidante, antinflamatório, calmante, antimicrobiano e até mesmo hepatoprotetores diante do exposto esta pesquisa tem como objetivo, fazer uma análise de qualidade e microbiológica da erva processada e desidratada (alecrim) obtida no mercado do ver-o-peso, cidade de Belém-PA, através do método qualitativo, determinação de material estranho, perda da dessecação, analises microscópicas e fitoquímica baseadas na farmacopéia Brasileira.
