Rheological study of Jabuticaba pulp with different concentrations of arabic gum

Resumo: This study aimed to compare rheological analyzes in the function of adding an encapsulated agent that can be found in Jabuticaba. The rheological study was performed according to the concentration of gum arabic (0, 5, 10 and 15%) and the rheological models of Bingham, Mizrahi-Berk, Casson, Herschel-Bulkley and Ostwald-de-Waelle (Law of Power) adjusted to the experimental data. Herschel-Bulkley and Mizrahi-Berk rheological models presented the best adjustments for all formulations with coefficients of determination (R2) greater than 0.99 and chi-square function less than 0.12. It was observed that the consistency index increased with the addition of gum arabic to the Herschel-Bulkley and Ostwald-de-Waele models, indicating that they became more consistent and the viscosity decreased with increasing strain rate of the fluid. Therefore, the rheological study indicated that the pulp and its formulations, with the addition of the encapsulating agent, presented non-Newtonian fluid behavior, in the specific case of a pseudoplastic.

El estudio reológico se realizó según la concentración de goma arábiga (0, 5, 10 y 15%) y los modelos reológicos de Bingham, Mizrahi-Berk, Casson, Herschel-Bulkley y Ostwald-de-Waelle (Ley del poder) ajustado a los datos experimentales. Los modelos reológicos de Herschel-Bulkley y Mizrahi-Berk presentaron los mejores ajustes para todas las formulaciones con coeficientes de determinación (R2) mayores que 0.99 y la función chi-cuadrado menor que 0.12. Se observó que el índice de consistencia aumentó con la adición de goma arábiga a los modelos Herschel-Bulkley y Ostwald-de-Waele, lo que indica que se volvieron más consistentes y la viscosidad disminuyó al aumentar la velocidad de deformación del fluido. Por lo tanto, el estudio reológico indicó que la pulpa y sus formulaciones, con la adición del agente encapsulante, presentaron un comportamiento fluido no newtoniano, en el caso específico de un pseudoplástico.Este estudo teve como objetivo comparar análises reológicas em função da adição do agente encapsulante goma arábica na polpa de Jabuticaba. O estudo reológico foi realizado em função da concentração de goma arábica (0, 5, 10 e 15%) e os modelos reológicos de Bingham, Mizrahi-Berk, Casson, Herschel-Bulkley e Ostwald-de-Waelle (Lei da Potência) foram ajustados aos dados experimentais.  Os modelos reológicos de Herschel-Bulkley e Mizrahi-Berk apresentaram os melhores ajustes para todas as formulações com coeficientes de determinação (R2) superiores a 0,99 e a função qui-quadrado inferiores a 0,12. Observou-se que o índice de consistência apresentou tendência de aumento com a adição da goma arábica para os modelos de Herschel-Bulkley e Ostwald-de-Waele, indicando que estas se tornaram mais consistentes e a viscosidade diminui com o aumento da taxa de deformação do fluido.
