Resumo: This study aimed to evaluate the acceptability and nutritional profile of school meals in a public educational institution in the city of Picos-PI. For this, a cross-sectional descriptive research was developed. Regarding the assessment of acceptability, data collection was based on the redemption of hedonic scale sheets referring to the two most commonly offered preparations, applied by nutritionists responsible for school feeding in the municipality. The quantitative analysis was made by calculating the annual menu, adopting the regulation for nutritional values defined for school meals as a parameter. The qualitative profile was evaluated according to the recommendations of the National School Education Program. None of the preparations was found to achieve satisfactory acceptability. Energy and nutritional imbalances were found, and low fruit supply, little variety of preparations and non-differentiation of menus according to different age groups. The findings of this study proved that the school's diet is in disagreement with what is regulated, so its composition should be reviewed.

Para ello, se desarrolló una investigación descriptiva transversal. Con respecto a la evaluación de aceptabilidad, la recopilación de datos se basó en el canje de hojas de escala hedónica que se refieren a las dos preparaciones más comúnmente ofrecidas, aplicadas por nutricionistas responsables de la alimentación escolar en el municipio. El análisis cuantitativo se realizó mediante el cálculo del menú anual, adoptando la regulación de los valores nutricionales definidos para las comidas escolares como un parámetro. El perfil cualitativo se evaluó de acuerdo con las recomendaciones del Programa Nacional de Educación Escolar. No se encontró ninguna de las preparaciones para lograr una aceptación satisfactoria. Se encontraron desequilibrios energéticos y nutricionales, y bajo suministro de fruta, poca variedad de preparaciones y no diferenciación de menús según los diferentes grupos de edad. Los hallazgos de este estudio demostraron que la dieta de la escuela está en desacuerdo con lo que está regulado, por lo que se debe revisar su composición.Este estudo objetivou realizar a avaliação da aceitabilidade e perfil nutricional da merenda escolar de uma instituição pública de ensino na cidade de Picos-PI. Para isto, foi desenvolvida uma pesquisa transversal, do tipo descritiva. Quanto à avaliação da aceitabilidade, a coleta de dados ocorreu com base no resgate das fichas de escala hedônica referentes às duas preparações mais comumente ofertadas, aplicadas por nutricionistas responsáveis pela alimentação escolar do município. A análise quantitativa foi feita através do cálculo do cardápio anual, adotando-se a regulamentação para valores nutricionais definidas para a merenda escolar como parâmetro. O perfil qualitativo foi avaliado segundo as preconizações do Programa Nacional de Educação Escolar. Percebeu-se que nenhuma das preparações atingiu aceitabilidade satisfatória. Foram encontrados desequilíbrios energéticos e nutricionais, além disso, percebeu-se baixa oferta de frutas, pouca variedade de preparações e não diferenciação de cardápios segundo faixas-etárias diferentes.
