The modernization of the global poultry industry along with consumer trends in search of safe foods that meet the requirements of importing countries of Brazilian chicken, makes the organic acids are an alternative to replace the use of antibiotics. This study aims to evaluate the morphological, immunological and husbandry of broilers supplemented with microencapsulated sodium butyrate. Therefore, we used 720 chicks a day in life, housed in 40 boxes experimental measuring 1.5 m², with 18 birds each, with a density of 12 chickens / m², distributed in a completely randomized in a 2x6 factorial, where factors were two experimental diets: control: Ration without supplementation of sodium butyrate; Treaty (BS): Feed supplementation with sodium butyrate, with four replicates per treatment and six collection periods 7, 14, 21 and 35 days each week, two birds per plot were weighed and killed by cervical dislocation, which were collected fragments of duodenum, jejunum, ileum, liver, spleen, thymus and bursa of Fabricius. The amostrasforam weighed and opened longitudinally, rinsed in phosphate buffer (0.1M, pH 7.4) and then fixed in 4% glutaraldehyde in 0.1 M phosphate buffer, pH 7.4, for 24 hours, were processed in Routine histological technique in paraffin and historesin and stained by hematoxylin-eosin, hematoxylin-Phloxine, Sudan Black and Alcian Blue. To evaluate the humoral immune response, blood samples were collected before vaccination DNC (Newcastle disease) and at 21, 33 and 42, where we assessed the levels of antibodies in response to vaccination. The antibody levels were quantified by ELISA. In addition we assessed the levels of animal performance, such as feed, daily weight gain, feed intake and viability of diets. Data were subjected to analysis of variance (ANOVA) of SAS, and the averages compared by Tukey method at 5% significance. Were also made correlation analyzes.
