Resumo: This study aims to identify changes in standard and selection of complementary foods, during wean phase, which have been used from the past until nowadays, in rural communities in Cansanção - Bahia - Brazil. This research includes 226 small producer's children from zero (O) to two (2) years of age who live in one ofthe driest and poorest areas of Brazilian Northeast. The informations concerning their past were gotten from twenty (20) histories of their lives, informal talks and declarations, which were given by the older members of those communities at meetings during tive years. The present data collection was made through questionnaires answered by mothers or person responsible for the child, from 1988 to 1989. The introduction of complementary and substitute food to breast-feeding occurs mostly between zero {O) and 29 days of life. This untimely introduction seems to follow an ancient cultural tradition of this population. lt was observed that the kind of food selected to complement or substitute breastfeeding has not been the sarne used in the past. They used to consume foods produced by themselves like cassava flour, "tapioca" and goat milk, but these foods have been replaced by industrialized foods available at local market. Atone year of age, children start eating table foods: beans and cassava flour, which are basic foods. They also consume small portions of meat and eggs. The consume of fruits and vegetables is seasonal.

The consume of fruits and vegetables is seasonal.Pretende-se, com este trabalho, identificar as mudanças ocorridas na prática do desmame e na seleção e uso de alimentos complementares e sucedâneos do leite materno ao longo do tempo, em comunidades rurais do Município de Cansanção, semi-árido do Estado da Bahia. As informações que se referem ao passado foram obtidas através de vinte (20) histórias de vida coletadas entre os membros mais velhos da comunidade e do diário de campo, onde ficaram registrados conversas, depoimentos e fatos do cotidiano ao longo de cinco anos de convivência na área. Os dados referem-se a 226 crianças das famílias que, à data do estudo, apresentavam até 02 anos de idade. As informações foram coletadas através de formulários aplicados às mães ou responsáveis pelo menor, no período de 1988 a 1989. A introdução de alimentos complementares e sucedâneos do leite materno no regime infantil é feita, predominantemente, entre O e 29 dias de vida. A precocidade destà introdução guarda similitude com o padrão cultural do passado, parecendo ser uma prática antiga da população. Pode­ se observar também que o tipo de alimento selecionado como complementar e/ou sucedâneo do leite materno sofreu marcadas alterações no curso do tempo. Os alimentos de produção própria para o autoconsumo, a exemplo da farinha de mandioca, tapioca e o leite de cabra, utilizados em preparações infantis, cederam lugar aos alimentos industrializados, disponíveis no mercado consumidor. Ao completar um ano de idade, a criação começa a participar do cardápio familiar, tendo como alimentos básicos o feijão e a farinha de mandioca. Carnes e ovos são consumidos em pequenas quantidades.
