BABASSU MESOCARP BRAN IN FINISHING YOUNG BULLS: CARCASS CHARACTERISTICS AND COMMERCIAL CUTS OF THE PISTOL CUT

Resumo: We evaluated carcass characteristics, weight and percentage of prepared commercial cuts of the primal pistol cut (PC) of 30 young crossbred bulls fed diets which included replacement levels (0, 25, 50, 70 and 100% of the dry matter, DM) of corn by babassu mesocarp bran (BMB). The experiment was a completely randomized design with six replicates. Slaughter weight was not affected by treatments. Hot and cold carcass weights decreased linearly (P<.05) at 230 g and 250 g, respectively, for each 1 kg of replacement, and hot carcass yield (HC) decreased by 3.2 g/kg of HC for each 1 kg of DM of BMB in the diet (P<0.05).  Subcutaneous fat thickness presented a quadratic (P<.05) response with maximum point estimated by the regression equation of 4.29 mm with 33.3% substitution. The proportion of PC of the carcass increased linearly as levels of BMB in the diet increased (P<.05). The percentage of side cut showed a quadratic response (P<.05), with maximum point estimated with 33.3% substitution. The weight of the prepared commercial cuts of the PC, striploin, knuckle and eye round, and the percentage of tenderloin, topside and shank, were influenced by the diet (P<0.05). There was no change in prepared meat cuts yields of PC (73.22%) (P<.05). The use of babassu mesocarp bran to replace corn in cattle finishing diets does not affect the weight and meat yield of the pistol cut, but decreases linearly hot carcass weight, and subcutaneous fat thickness at replacement levels above 33.3%. KEYWORDS: biofuel; by-products; carcass yield; feedlot; meat yield; tenderloin.Objetivou-se avaliar as características de carcaça, o peso e o percentual dos cortes secundários preparados que compõem o traseiro especial (TE) de 30 tourinhos mestiços, alimentados com dietas contendo níveis de substituição do milho pelo farelo do mesocarpo de babaçu (FMB), nos níveis 0; 25; 50; 75 e 100%. O delineamento experimental utilizado foi o inteiramente casualizado com seis repetições. Os pesos de carcaças quente e fria reduziram linearmente em 230 g e 250 g, respectivamente, para cada 1 kg de substituição, e o rendimento de carcaça quente (CQ) reduziu em 3,2 g/kg de CQ para cada 1 kg de MS de FMB na dieta. A espessura de gordura subcutânea apresentou comportamento quadrático com ponto de máxima estimado pela equação de regressão de 4,29 mm, com substituição do milho de 33,3%. A proporção de TE na carcaça aumentou linearmente frente ao incremento dos níveis de FMB. A participação percentual da ponta de agulha na carcaça teve comportamento quadrático com ponto de máximo em 33,3% de substituição. Os cortes secundários preparados do TE, expressos em peso, contrafilé, patinho e lagarto, e os cortes expressos em percentagem, filé-mignon, coxão mole e músculo, sofreram influência das dietas. Não houve alteração no rendimento dos cortes cárneos (73,22%). O uso do FMB em substituição ao milho em dietas de terminação de bovinos não altera o peso e rendimento cárneo do traseiro especial, porém reduz linearmente o peso da carcaça quente e a espessura de gordura subcutânea em níveis de substituição superiores a 33,3%.
