Curso de Agronomia.O presente trabalho teve como objetivo analisar a viabilidade econômica da produção de flores comestíveis de capuchinha (Tropaeolum majus L.) em sistema hidropônico em Santo Amaro da Imperatriz, Santa Catarina. Para o levantamento de dados para o projeto foram realizadas vinte e seis entrevistas com representantes de estabelecimentos de alta gastronomia dos municípios de Florianópolis, São José, Palhoça e Santo Amaro da Imperatriz com o objetivo de determinar o volume de flores comestíveis que são ofertadas no mercado e o preço médio de venda. Foi desenvolvido o projeto de uma estufa para atender a demanda mensal obtida de 660 bandejas de flores comestíveis. A viabilidade econômica do projeto foi analisada através de indicadores econômicos, sendo eles: Valor Presente Líquido (VPL), Taxa Interna de Retorno (TIR) e Payback descontado. Também analisou-se o risco do investimento através da técnica Análise de Sensibilidade. O investimento inicial foi inferido em R$ 50.611,76, os custos anuais em R$ 47.247,97 e a receita bruta anual em R$ 75.240,00. Constatou-se que o projeto é economicamente viável, apresentando um VPL de R$ 120.038, 67, TIR de 36%, com um tempo de recuperação do investimento de 2 anos e 4 meses.This study aimed to analyze the economic feasibility of production of edible nasturtium flowers (Tropaeolum majus L.) hydroponically in Santo Amaro da Imperatriz, Santa Catarina. For data collection for the project were held twenty-six interviews with representatives of haute cuisine establishments in the cities of Florianópolis, São José, Palhoça and Santo Amaro da Imperatriz in order to determine the volume of edible flowers that are offered in the market and the average selling price. It was developed the project of a greenhouse to meet the monthly demand obtained from 660 trays of edible flowers. The economic viability of the project was analyzed by economic indicators, as follows: Net Present Value (NPV), Internal Rate of Return (IRR) and Payback discounted. Also analyzed the investment risk through technical Sensitivity Analysis. The initial investment was inferred by R $ 50,611.76, the annual cost of R $ 47,247.97 and the annual gross revenue of R $ 75,240.00.
