SANITARY-HYGIENIC ASPECTS IN COMMERCIALIZATION IN FISH MARKET IGARAPÉ DAS MULHERES, MACAPÁ-AP

Resumo: | Being highly perishable, the fish requires special care from capture to arrival at the consumer's home. However, after the capture, the microbiota is altered at all stages. This study aimed to assess the sanitary conditions of marketing of fish in the Fish Friday, Macapá-AP, in order to identify critical points of the process. We used the direct observational method with the application of a checklist, based on the RDC nº216, items for building, equipment / instruments, utensils and hygiene, clothing, hygienic habits, personal protective equipment and quality raw material. The fair in question was rated in Group 2, failing to meet the requirements of industry topics Organization (marketing space extremely limited, national manager indefinite absence of good practice manual, along with the standard operating procedures); hygiene observation site (fish is exposed without ice, ice used only for storage, water use without treatment), and cleaned the handler (clothing unsatisfactory, tobacco consumption during marketing, simultaneous manipulation of money and food, no clean hands when handling food) thus does not meet the provisions of the legislation. Such unconformities compromise the quality of products and endangers the health of the consumer, demonstrating that only the drafting of laws is not sufficient to ensure food safety without intense scrutiny in conjunction with the drafting resolutions appropriate to the reality of each region and training programs aimed at promoting recycling and the production of safe food hygiene and sanitary conditions in the question that reality cannot be changed.Keywords: marketing of fish; conditions of merchantability; market. |

No entanto, após a captura, a microbiota é alterada em todas as etapas. Este trabalho teve como objetivo avaliar as condições higiênico-sanitárias da comercialização de peixes na feira do Pescado, Macapá-AP, com o intuito de identificar pontos críticos deste processo. Foi utilizado o método observacional direto, com a aplicação de um check list, baseado na RDC nº. 216, para os itens de edificação, equipamentos/instrumentos, utensílios e higienização, vestuário, hábitos higiênicos, equipamentos de proteção individual e qualidade de matéria prima. A feira em questão teve classificação no Grupo 2, deixando de atender requisitos nos tópicos Organização do setor (espaço de comercialização extremamente reduzido, órgão gestor indefinido, ausência de manual de boas práticas, juntamente com os procedimentos operacionais padrões); Higiene do local de observação (peixe é exposto sem gelo, gelo utilizado apenas para armazenamento, água utilizada sem tratamento); e, higiene do manipulador (vestuário insatisfatório, consumo de tabaco durante a comercialização, manipulação simultânea de dinheiro e alimento, não higienização das mãos ao manipular alimento), dessa forma, não atende aos preceitos da legislação. Tais inconformidades comprometem a qualidade dos produtos e coloca em risco a saúde do consumidor, demonstrando que somente a elaboração de leis não é suficiente para assegurar a inocuidade dos alimentos, sem fiscalização intensa em conjunto com a elaboração de resoluções adequadas com a realidade de cada região, bem como programas de treinamento e reciclagem que visem promover a produção de alimentos seguros no quesito higiênico-sanitário essa realidade não pode ser mudada.Palavras-chave: comercialização de pescado, condições de comercialização, mercado.
