Influence of climate factors on performance, carcass quality and pork meat: bibliographic review

Resumo: | Given the growth of swine farming and considering that to ensure the effectiveness of the intensification of productivity it is essential to identify possibilities to make the environment in which the animals live pleasant and beneficial. The objective was to investigate the influence of the thermal environment on the performance of swine in different stages of the production chain, meat and carcass quality. For that, a literature review was carried out, focusing on thermogenesis, thermoregulation mechanisms, ambience, stress assessment and the effects of thermal stress. The results of the study confirmed that thermal stress has negative effects on the productive performance of swine, triggering significant losses from production to the final product, impacting animal performance and meat and carcass quality. In this sense, the study reinforces the need to know the numerous factors that can exert direct and/or indirect effects on animals, along the production chain, resulting in reduced productivity and consequent economic losses. Furthermore, it strengthens the importance of adopting management strategies that can mitigate the effects of thermal stress on animal production, considering that well-being and thermal comfort are essential for maintaining high levels of productivity. |

El objetivo fue investigar la influencia del ambiente térmico en el desempeño de cerdos en diferentes etapas de la cadena productiva, calidad de carne y canal. Para ello, se realizó una revisión bibliográfica, enfocándose en termogénesis, mecanismos de termorregulación, ambiente, evaluación del estrés y efectos del estrés por calor. Los resultados del estudio confirmaron que el estrés por calor tiene efectos negativos en el desempeño productivo de los cerdos, provocando pérdidas significativas desde la producción hasta el producto final, impactando el desempeño animal y la calidad de la carne y la canal. En este sentido, el estudio refuerza la necesidad de conocer los numerosos factores que pueden ejercer efectos directos y/o indirectos sobre los animales a lo largo de la cadena productiva, resultando en reducción de la productividad y consecuentes pérdidas económicas. Además, refuerza la importancia de adoptar estrategias de manejo que puedan mitigar los efectos del estrés por calor en la producción animal, considerando que el bienestar y el confort térmico son esenciales para mantener altos niveles de productividad.Diante do crescimento da suinocultura e considerando que para garantir a efetividade da intensificação da produtividade é fundamental identificar possibilidades para tornar o ambiente no qual os animais vivem agradável e proveitoso. Objetivou-se investigar a influência do ambiente térmico no desempenho de suínos em diferentes etapas da cadeia produtiva, qualidade de carne e carcaça. Para isso, foi realizada uma revisão bibliográfica, com foco na termogênese, mecanismos de termorregulação, ambiência, avaliação do estresse e efeitos do estresse térmico. Os resultados do estudo confirmaram que o estresse térmico exerce efeitos negativos sobre o desempenho produtivo dos suínos, desencadeando perdas significativas desde a produção até o produto final, impactando no desempenho dos animais e na qualidade da carne e de carcaça. Nesse sentido, o estudo reforça a necessidade de se conhecer os inúmeros fatores que podem exercer efeitos diretos e/ou indiretos sobre os animais, ao longo da cadeia produtiva, acarretando redução da produtividade e consequentes prejuízos econômicos.
