Microbiological evaluation of water samples and milk from agroecological and conventional base properties in western Paraná

Resumo: The objective was to evaluate the microbiological quality of water and milk from agroecological and conventional properties in western Paraná. The collections were carried out in 20 conventional properties in the municipality of Santa Helena - PR, and in 27 agroecological bases and in Diamante d'Oeste and Ramilândia - PR. Milk collections were carried out in different production systems and seasons. Were analyzed the contamination of thermotolerant coliforms (ThermC), total coliforms (TC), enterobacteria, aerobic mesophiles (AM), determination of chemical composition, somatic cell count (SCC) and total bacterial count (TBC). There was no difference in milk composition between summer production systems. In relation to SCC during the winter, 44.4% and 55.0% of the properties presented values ​​above 600 thousand cells mL-1, in the agroecological and conventional systems, respectively. In both seasons, most of the agroecological properties are above 600 thousand CFU mL-1 of TBC. In both production systems and seasons, the AM values ​​were lower than those allowed by NI76, and there was no difference for enterobacteria in milk. The count of milk TC in winter was similar between the two production systems. For the water samples for cleaning the milking equipment, the TC and ThermC values were higher in the agroecological system. The use of management practices is recommended in order to reduce the SCC and TBC values ​​of milk produced in the western of Paraná to conform to the values required by NI76.

Las recolecciones se llevaron a cabo en 20 predios convencionales en el municipio de Santa Helena - PR, y en 27 bases agroecológicas en Diamante d'Oeste y Ramilândia - PR. Las recolecciones de leche se realizaron en los diferentes sistemas de producción y temporadas. Se analizó la contaminación por coliformes termotolerantes (CTerm), coliformes totales (CT), enterobacterias, mesófilos aeróbicos (MA), determinación de composición química, recuento de células somáticas (RCC) y recuento bacteriano total (RBT). No hubo diferencia en la composición de la leche entre los sistemas de producción de verano. En relación a la RCC durante el invierno, 44,4% y 55,0% de las propiedades presentaron valores superiores a 600 mil células mL-1, en los sistemas agroecológico y convencional, respectivamente. En ambas temporadas, la mayoría de las propiedades agroecológicas están por encima de 600 mil UFC mL-1 de RBT. Tanto en los sistemas de producción como en las estaciones, los valores de MA fueron inferiores a los permitidos por el IN76 y no hubo diferencia para las enterobacterias en la leche. El recuento de CT de leche en invierno fue similar entre los dos sistemas de producción. Para las muestras de agua para la limpieza del equipo de ordeño, los valores de CT y CTerm fueron mayores en el sistema agroecológico. Se recomienda el uso de prácticas de manejo con el fin de reducir los valores de RCC y RBT de la leche producida en el Oeste de Paraná para ajustarse a los valores requeridos por IN76.Objetivou-se avaliar a qualidade microbiológica da água e do leite provenientes de propriedades de base agroecológica e convencional no Oeste do Paraná. As coletas foram realizadas em 20 propriedades convencionais no município de Santa Helena – PR, e em 27 de base agroecológica em Diamante d’Oeste e Ramilândia – PR. Foram realizadas coletas de leite nos diferentes sistemas de produção e estações do ano. Foram analisadas a contaminação por coliformes termotolerantes (CTerm), coliformes totais (CT), enterobactérias, aeróbios mesófilos (AM), a determinação da composição química, contagem de células somáticas (CCS) e contagem bacteriana total (CBT). Não houve diferença para a composição do leite entre os sistemas de produção no verão. Em relação a CCS durante o inverno, 44,4% e 55,0% das propriedades apresentaram valores acima de 600 mil céls mL-1, nos sistemas agroecológico e convencional, respectivamente. Em ambas as estações, a maioria das propriedades agroecológicas encontram-se acima de 600 mil UFC mL-1 de CBT. Em ambos os sistemas de produção e estações, os valores de AM apresentaram valores inferiores ao permitido pela IN76, e não houve diferença para as enterobactérias no leite. A contagem de CT no leite no inverno foi semelhante entre os dois sistemas de produção. Para as amostras da água para limpeza dos equipamentos de ordenha, os valores de CT e CTerm foram superiores no sistema agroecológico.
