Physicochemical and microbiological analyzes of mineral water samples

Resumo: The public water supply in the municipality of Sete Lagoas (MG) is characterized as hard due to the limestone characteristics of the subsoil, generating an unpleasant taste and causing a high consumption of bottled mineral water. The wide variety of brands available in the municipality raises questions about their quality. Thus, this study aimed to evaluate the physical-chemical, microbiological characteristics and verify the labeling information in mineral water samples filled in a volume of 20 liters sold in the municipality of Sete Lagoas-MG. Eighteen different samples were analyzed in triplicate. The determination of total, thermotolerant coliforms, Escherichia coli and Pseudomonas aeruginosa was performed using the Most Probable Number (NMP) technique and Enterococcus sp. by the filter membrane method. The analysis of hardness and total alkalinity were performed by the volumetric method with visual indicator, the concentration of minerals (calcium, magnesium, sodium and potassium) by atomic absorption spectrometry and the pH measurement using a pH meter. It was found that eight samples were unsuitable for consumption, and seven showed contamination by Enterococcus sp. and three by P. aeruginosa. The pH, hardness and alkalinity were in accordance with the standards established for drinking water. For most samples, the values ​​found for the analyzed minerals varied considerably when compared to what was stated on the label. It was concluded that some brands were at odds, whether for microbiological or physical-chemical reasons. Inspection, periodic analysis and application of good practices are essential to provide mineral water of adequate quality for human consumption.

La gran variedad de marcas disponibles en el municipio plantea dudas sobre su calidad. Por lo tanto, este estudio tuvo como objetivo evaluar las características físico-químicas, microbiológicas y verificar la información de etiquetado en muestras de agua mineral llenadas en un volumen de 20 litros vendidos en el municipio de Sete Lagoas-MG. Dieciocho muestras diferentes fueron analizadas por triplicado. La determinación de coliformes termotolerantes totales, Escherichia coli y Pseudomonas aeruginosa se realizó utilizando la técnica de Número más probable (NMP) y Enterococcus sp. por el método de membrana de filtro. El análisis de dureza y alcalinidad total se realizó mediante el método volumétrico con indicador visual, la concentración de minerales (calcio, magnesio, sodio y potasio) mediante espectrometría de absorción atómica y la medición del pH utilizando un medidor de pH. Se encontró que ocho muestras no eran aptas para el consumo, y siete mostraron contaminación por Enterococcus sp. y tres por P. aeruginosa. El pH, la dureza y la alcalinidad estaban de acuerdo con los estándares establecidos para el agua potable. Para la mayoría de las muestras, los valores encontrados para los minerales analizados variaron considerablemente en comparación con lo que se indica en la etiqueta. Se concluyó que algunas marcas estaban en desacuerdo, ya sea por razones microbiológicas o físico-químicas. La inspección, el análisis periódico y la aplicación de buenas prácticas son esenciales para proporcionar agua mineral de calidad adecuada para el consumo humano.A água de abastecimento público do município de Sete Lagoas (MG) é caracterizada como dura devido às características calcárias do subsolo, gerando um sabor desagradável e ocasionando um elevado consumo de água mineral engarrafada. A grande variedade de marcas disponíveis no município gera questionamentos sobre a qualidade das mesmas. Sendo assim, este trabalho objetivou avaliar as características físico-químicas, microbiológicas e verificar as informações de rotulagem em amostras de água mineral envasadas em volume de 20 litros comercializadas no município de Sete Lagoas-MG. Foram em analisadas em triplicata 18 amostras diferentes. A determinação de coliformes totais, termotolerantes, Escherichia coli e Pseudomonas aeruginosa foi realizada através da técnica do Número Mais Provável (NMP) e a contagem de Enterococcus sp. pelo método da membrana filtrante.  As análises de dureza e alcalinidade total foram realizadas pelo método volumétrico com indicador visual, a concentração dos minerais (cálcio, magnésio, sódio e potássio) por espectrometria de absorção atômica e a medida de pH utilizando um medidor de pH.  Verificou-se que oito amostras apresentaram-se impróprias para o consumo, sendo que, sete apresentaram contaminação por Enterococcus sp. e três por P. aeruginosa. O pH, a dureza e a alcalinidade estavam de acordo com os padrões estabelecidos para águas potáveis. Para a maioria das amostras os valores encontrados para os minerais analisados variaram bastante quando comparados com o declarado no rótulo. Concluiu-se que algumas marcas estavam em desacordo, seja por questão microbiológica ou físico-química.
