Resumo: The objective of this work was to perform the chemical and physical characterization of the kino bark (Cucumis metuliferus) as well as to evaluate through mathematical modeling the drying kinetics at different temperatures. The barks were characterized in natura for water content, total and soluble solids, water activity, ashes, pH, total titratable acidity, Ratio and ascorbic acid. The drying kinetics at 60, 70, 80 and 90 °C were determined by adjusting the data to twelve mathematical models using the coefficient of determination (R2) and the mean square deviation (DQM) as adjustment criteria. The kino barks showed high water content and water activity, with relatively low acidity and ash parameters and satisfactory contents of ascorbic acid, total and soluble solids. Ten of the models tested presented satisfactory adjustments to the drying kinetics data, highlighting the Page and Diffusion Approximation models, with R²> 0.999 and DQM <0.091.

Las cortezas se caracterizaron en natura por contenido de agua, sólidos totales y solubles, actividad del agua, cenizas, pH, acidez titulable total, relación y ácido ascórbico. La cinética de secado se determinó a 60, 70, 80 y 90 °C, ajustando los datos a doce modelos matemáticos, considerando como criterios de ajuste el coeficiente de determinación (R2) y la desviación cuadrática media (DQM). Las cortezas de kino mostraron alta actividad de agua y agua, baja acidez y cenizas, buen contenido de sólidos totales y sólidos solubles moderados y contenido de ácido ascórbico. Diez de los modelos probados presentaron ajustes satisfactorios a los datos de cinética de secado, destacando los modelos de aproximación de página y difusión, con R²> 0.999 y DQM <0.091.Objetivou-se com este trabalho realizar a caracterização química e física das cascas do kino (Cucumis metuliferus) bem como avaliar através da modelagem matemática a cinética de secagem em diferentes temperaturas. As cascas foram caracterizadas in natura quanto ao teor de água, sólidos totais e solúveis, atividade de água, cinzas, pH, acidez total titulável, Ratio e ácido ascórbico. Determinou-se a cinética de secagem nas temperaturas de 60, 70, 80 e 90 °C, ajustando os dados a doze modelos matemáticos utilizando como critérios de ajuste o coeficiente de determinação (R2) e o desvio quadrático médio (DQM). As cascas do kino apresentaram alto teor de água e atividade de água, com parâmetros de acidez e cinzas relativamente baixos e teores satisfatórios de ácido ascórbico, sólidos totais e solúveis.
