Microbiological profile of milk of Curraleiro Pé-Duro and Pantaneiro cattle breeds

Resumo: The microbiological quality of raw milk can be directly influenced by the health of the animals, hygiene procedures performed during milking and storage conditions of the product. Given the need to characterize the microbiological aspects related to milk production of the bovine herds of the breeds Curraleiro Pé-Duro and Pantaneiro, 333 samples of raw milk were evaluated from the count of aerobic microorganisms mesophilic, psychrotrophic, Staphylococus coagulase positive as well as the determination of the most likely number of coliforms at 30°C and 45°C. Results showed low levels of contamination of milk samples by mesophils (7.5x101 - 8.7x103 CFU/ml - Hard Foot Currall/1.8x102 - 8.6x102 CFU/ml- Pantaneiro), psychrotrophic (2 - 1.4x102 CFU/ml / 2, 6x101 - 1.4x102 CFU/ml), Coagulase positive Staphylococcus (4 - 5.2x102 CFU/ml/ 1.1x102 - 7.6 x102 CFU/ml), coliforms at 30°C( 2.0 - 40.2 NMP/ml / 0.6 - 21.9 NMP/ml) and coliforms at 45°C (0.9-14.8 NMP/ml / 0.4- 20.3 NMP/ml). These results demonstrate the potential that the cattle herds of the breeds Curraleiro Pé-Duro and Pantaneiro present regarding the microbiological quality of the milk, the adequacy of the product to the sanitary legislation as well as the technological viability of this food matrix in the production of dairy products.

En vista de la necesidad de caracterizar los aspectos microbiológicos relacionados con la producción de leche de los rebaños de bovinos de las razas Curraleiro Pé-Duro y Pantaneiro, se evaluaron 333 muestras de leche cruda a partir del recuento de microorganismos aeróbicos mesófilos, psicotróficos y con Staphylococus coagulasa positiva, así como la determinación del número más probable de coliformes a 30°C y 45°C. Los resultados mostraron bajos niveles de contaminación de las muestras de leche por mesófilos (7,5x101 - 8,7x103 UFC/ml - Pie Duro / 1,8x102 - 8,6x102 UFC/ml- Pantaneiro), psicotróficos (2 - 1,4x102 UFC/ml / 2, 6x101 - 1,4x102 UFC/ml), Estafilococos coagulasa positivos (4 - 5,2x102 UFC/ml/ 1,1x102 - 7,6 x102 UFC/ml), coliformes a 30°C( 2,0 - 40,2 MPN/ml / 0,6 - 21,9 MPN/ml) y coliformes a 45°C (0,9-14,8 MPN/ml / 0,4- 20,3 MPN/ml). Estos resultados demuestran el potencial de los rebaños de bovinos de las razas Curraleiro Pé-Duro y Pantaneiro en cuanto a la calidad microbiológica de la leche, la adecuación del producto a la legislación sanitaria, así como la viabilidad tecnológica de esta matriz alimentaria en la producción de productos lácteos.A qualidade microbiológica do leite cru pode ser influenciada diretamente pela sanidade dos animais, procedimentos de higiene realizados durante a ordenha e condições de armazenamento do produto. Diante da necessidade de caracterizar os aspectos microbiológicos relacionados à produção de leite dos rebanhos bovinos das raças Curraleiro Pé-Duro e Pantaneiro, foram avaliadas 333 amostras de leite cru à partir da contagem de microrganismos aeróbios mesófilos, psicrotróficos, Staphylococus coagulase positiva bem como a determinação do número mais provável de coliformes a 30°C e a 45°C. Os resultados obtidos mostraram baixos níveis de contaminação das amostras de leite por mesófilos (7,5x101 - 8,7x103 UFC/ml – Curraleiro Pé-Duro/1,8x102 -  8,6x102 UFC/ml- Pantaneiro), psicrotróficos (2 - 1,4x102 UFC/ml / 2,6x101 - 1,4x102 UFC/ml), Staphylococcus coagulase positiva (4 - 5,2x102 UFC/ml/ 1,1x102 - 7,6 x102 UFC/ml), coliformes a 30°C( 2,0 - 40,2 NMP/ml / 0,6 - 21,9 NMP/ml) e coliformes a 45°C (0,9-14,8 NMP/ml / 0,4- 20,3 NMP/ml).
