Analysis of good manufacturing practices in the production of rennet cheese in artisanal dairy located in the Center-South Region of Ceará

Resumo: Coalho cheese is a typical national product, which originates in Northeast Brazil, generating a source of income for small families and large industries. In order to comply with the legislation and increase the quality of the products produced, producers seek to implement quality management programs. The objective of this research was to evaluate the hygienic-sanitary conditions in the production of Coalho cheese in municipalities in the Center-south region of Ceará, according to the Good Manufacturing Practices legislation of the Ministry of Agriculture, Livestock and Supply. Socioeconomic and technical questionnaires were applied to assess the profile of producers, in which information was collected such as level of education, time of practice, knowledge of legal documents and courses on cheese production by producers and whether they had assistance technical. In addition, the questionnaires aimed to ascertain the main difficulties in meeting the Management of Good Manufacturing Practices in the production of Coalho cheese. The research was carried out in the municipalities of Quixelô, Lavras da Mangabeira, Orós, Icó, Cariús and Jucás, both located in the interior of the state of Ceará. The results of this study showed that the rural producers visited are mostly in disagreement with the standards required by the legislation, due to the lack of technical assistance, lack of prior knowledge and scarcity of financial incentives to help them adapt cheesemakers.

Para cumplir con la legislación y aumentar la calidad de los productos producidos, los productores buscan implementar programas de gestión de calidad. El objetivo de esta investigación fue evaluar las condiciones higiénico-sanitarias en la producción de queso Coalho en municipios de la región Centro-Sur de Ceará, de acuerdo con la legislación de Buenas Prácticas de Manufactura del Ministerio de Agricultura, Ganadería y Abastecimiento. Se aplicaron cuestionarios socioeconómicos y técnicos para evaluar el perfil de los productores, en los cuales se recopiló información como nivel de educación, tiempo de práctica, conocimiento de documentos legales y cursos sobre producción de queso por parte de los productores y si recibieron asistencia. técnico Además, los cuestionarios tenían por objeto determinar las principales dificultades para cumplir con la gestión de buenas prácticas de fabricación en la producción de queso Coalho. La investigación se llevó a cabo en los municipios de Quixelô, Lavras da Mangabeira, Orós, Icó, Cariús y Jucás, ambos ubicados en el interior del estado de Ceará. Los resultados de este estudio mostraron que los productores rurales visitados están en desacuerdo con los estándares requeridos por la legislación, debido a la falta de asistencia técnica, la falta de conocimiento previo y la escasez de incentivos financieros para ayudarlos a adaptar los queseros. O queijo de Coalho é um produto tipicamente nacional, o qual tem origem no Nordeste brasileiro, gerando fonte de renda para pequenas famílias e grandes indústrias. Com o intuito de atender a legislação e aumentar a qualidade dos produtos elaborados, os produtores buscam implementar programas de gestão de qualidade. Objetivou-se com esta pesquisa avaliar as condições higiênico-sanitárias na produção de queijo Coalho em municípios da região Centro-sul do Ceará, de acordo com a legislação de Boas Práticas de Fabricação do Ministério da Agricultura Pecuária e Abastecimento. Questionários socioeconômicos e técnicos foram aplicados para avaliar o perfil dos produtores, no qual foram coletadas informações como grau de escolaridade, tempo de prática do ofício, conhecimento sobre documentos legais e realização de cursos referente à produção de queijos por parte dos produtores e se possuíam assistência técnica. Além disso, os questionários visavam averiguar as principais dificuldades em atendimento à Gestão de Boas Práticas de Fabricação na produção de queijo Coalho.
