Análise morfológica e pesquisa de Escherichia coli em fígado de frango (Gallus gallus, LINNAEUS, 1758), linhagem cobb 500, abatidos em frigorífico industrial da Região Metropolitana de Recife

In order to subsidize the Federal Inspection Service for chicken meat and its byproducts quality assurance, the objectives of this work were to evaluate the morphology of chicken livers approved for consumption and also search for Escherichia coli liver contamination. Were collected aseptically, 110 chicken livers, lineage Cobb 500, from a industrial poultry slaughterhouse located in the metropolitan region of Recife. After macroscopic evaluation, where parameters such as shape, size, color, consistency, odor and presence or absence of visible lesions were considered, each sample was properly packaged, labeled and sent to the Laboratory of Histology and Microbiology at the Federal Rural University of Pernambuco to proceed to the histopathological studies and research of Escherichia coli, respectively. After processing and analysis of the samples with specific methods, it was observed that 97% of hepatic parenchyma consists of hepatocytes, 1.7% of leukocytes, 1.1% of blood vessels and 0.2% of bile vessels; as for the presence of E. coli, 91% of the samples were contaminated, indicating that the criteria used for approval and/or rejection of carcasses alone are not effective, given the livers were approved for consumption and during the analysis presented morphological integrity in 100% of the samples.
