Resumo: Abstract: The market points out to a consumption increase of special products. The objective of this study was to evaluate the acceptance of two varieties of special rice, SCS119 Rubi (red rice) and SCS120 Ônix (black-rice), by consumers. The study was carried out in three grocery stores located in Balneário Camboriú, Blumenau and Chapecó and one food Market in Balneário Camboriú, Santa Catarina, Brazil. A total of 1068 shoppers were invited to taste samples of cooked rice. Each interviewed filled up a form, based on hedonic scale with nine grades, to express, upon previously selected attributes, their satisfaction with the products. They were also invited to evaluate some physical and organoleptic properties of the special rice varieties. The variety SCS120 Ônix (black rice) and SCS119 Rubi (red rice) were very well accepted by consumers. They showed willingness to change habits of consumption from the regular milled or parboiled rice to the special varieties. The presence of phenolic compounds in special rice is the main factor in consumers´ decision to accept the varieties SCS119 Rubi and SCS120 Ônix.

O objetivo deste estudo foi conhecer a aceitação de mercado dos tipos especiais de arroz SCS119 Rubi (arroz-vermelho) e SCS120 Ônix (arroz -preto). Para a realização do teste sensorial foi solicitado a 1.068 julgadores não treinados que assinalassem em uma escala hedônica de 9 pontos o nível de satisfação provocado pelo consumo desses produtos. Os degustadores também foram motivados a externar sua opinião sobre atributos previamente selecionados para avaliação de suas propriedades físicas e organolépticas. As variedades SCS119 Rubi (arroz-vermelho) e SCS120 Ônix (arroz-preto) são bem aceitas pelo mercado consumidor, constituindo-se em novas alternativas de consumo. Existe pré-disposição dos consumidores para a substituição do padrão de consumo atual (arroz-branco e arroz parboilizado).
