Resumo: | Abstract: The market points out to a consumption increase of special products. The objective of this study was to evaluate the acceptance of two varieties of special rice, SCS119 Rubi (red rice) and SCS120 Ônix (black-rice), by consumers. The study was carried out in three grocery stores located in Balneário Camboriú, Blumenau and Chapecó and one food Market in Balneário Camboriú, Santa Catarina, Brazil. A total of 1068 shoppers were invited to taste samples of cooked rice. Each interviewed filled up a form, based on hedonic scale with nine grades, to express, upon previously selected attributes, their satisfaction with the products. They were also invited to evaluate some physical and organoleptic properties of the special rice varieties. The variety SCS120 Ônix (black rice) and SCS119 Rubi (red rice) were very well accepted by consumers. They showed willingness to change habits of consumption from the regular milled or parboiled rice to the special varieties. The presence of phenolic compounds in special rice is the main factor in consumers´ decision to accept the varieties SCS119 Rubi and SCS120 Ônix. |
