Resumo: The expansion of national vitiviniculture beyond traditional areas is an increasingly notorious reality. However, the climatic diversity between the different producing regions exposes the plants to different environmental conditions capable of influencing their performance. In this context, studies on the behavior of varieties in relation to their growing environment are important technical subsidies in the implementation of new ventures. The objective was to evaluate the phenology, the thermal needs and the maturation of eight wine varieties between 2013 and 2020 in the conditions of São Joaquim-SC. The thermal conditions available in the region were expressed in degrees-day (DG) in a correlative way with the phenological evaluations. The crops were subjected to analyzes of total acidity, pH and SST. The average vegetative cycle of the varieties was 200 days, with ‘Rebo’ being the longest cycle and ‘Manzoni Bianco the shortest cycle’. The studied varieties produced fruits with adequate maturation parameters for the elaboration of fine wines, with emphasis on ‘Rebo’ among reds and ‘Manzoni Bianco’ among white ones.
