Processing of canned Sarcocornia perennis

Resumo: The aim of this work was to produce and to evaluate the acceptance of Sarcocornia perennis conserves. Due to little availability of samples of Sarcocornia perennis in the Germplasm Bank of Epagri/EEI, an initial study was carried with Phaseolus vulgaris (string bean) using a factorial 2³. Analysis of pH, °Brix, titratabel total acidity and preference tests had been carried out, where four formulations with balanced concentrations on higher sugar content had been selected. Another preference test was carried out for the conserve of S. perennis, where the formulation sample of the factorial planning central point was selected, whose concentrations of vinegar, salt and sugar were intermediate. The data indicated that the conserve of S. perennis can be a potential product to encourage production by family farmers, due to the degree of acceptance and to the 59% yield. In view of commercial growing occurrence in some countries, with high value added for the commercialized canned products, this crop may be recommended as a market product.

In view of commercial growing occurrence in some countries, with high value added for the commercialized canned products, this crop may be recommended as a market product.Resumo: O objetivo deste trabalho foi produzir e avaliar a aceitação de conservas de Sarcocornia perennis e, devido à pouca disponibilidade de amostras dela no Banco de Germoplasma da Epagri/EEI, foi realizado um estudo inicial com P. vulgaris (vagem) usando um modelo fatorial 2³. Foram realizadas análises de pH, °Brix e acidez total titulável, além de testes de preferência, em que foram selecionadas quatro formulações com concentrações equilibradas ou com teor de açúcar mais elevado, resultando em tratamentos usados posteriormente para a produção das conservas de S. perennis. Outro teste de preferência foi realizado para a conserva de S. perennis, sendo selecionada a amostra da formulação do ponto central do planejamento fatorial, cujas concentrações de vinagre, sal e açúcar foram intermediárias. Os dados indicaram que a conserva de S. perennis pode ser um produto com potencial para estímulo à agricultura familiar catarinense devido ao grau de aceitação obtido e ao rendimento de 59%.
