HYGIENIC-SANITARY QUALITY OF RAW MILK IN THREE REGIONS OF THE STATE OF MINAS GERAIS - BRAZIL

Resumo: | The aim of this work was to diagnose the situation of the quality of the refrigerated raw milk of tanks of suppliers of an Usina Beneficiamento Lavras - MG, and fitness for IN- 51. We used the results of refrigerated raw milk samples analyzed in the Laboratory (Clinical Milk) Piracicaba-SP from the Jan./2006 Dez./2010. The samples were collected once a month randomly and sent to laboratory in cool boxes containing ice packs within 48 hours. The geometric means for SCC found were 506,000, 485,000, 440,000, 387,000 and 449,000 cells / mL. In the 1st period of IN-51, 75% of producers with a range of CCS were above 315,000 cells / mL and 25% were above 816,000 cells / mL. In the 2nd period 75% of producers with a range of CCS were above 251,000 cells / mL and 25% were above 717,000 cells / mL. The geometric means for CBT were found to 286,000, 345,000, 481,000, 214,000 and 179,000 CFU / mL. In the 1st period of IN-51, 75% of producers were with CBT values above 170,000 CFU / mL and 25% were above 1,253,000 CFU / mL. In the 2nd period 75% of producers were with CBT values above 136,000 CFU / mL and 25% were above 842,000 CFU / mL. During the period studied the geometric means of SCC and TBC met the requirements of NI-51. According to the results of the quartiles is a decreasing trend in milk SCC and TBC over the study period. |

O objetivo deste trabalho foi diagnosticar a situação da qualidade do leite cru refrigerado de tanques de fornecedores de uma Usina Beneficiamento em Lavras - MG e verificar adequação a IN- 51. Foram utilizados os resultados das amostras de leite cru refrigerado, analisadas no Laboratório da Clinica do Leite em Piracicaba-SP no período de Jan./2006 a Dez./2010. As amostras foram coletadas uma vez ao mês aleatoriamente e enviadas ao laboratório em caixas isotérmicas contendo gelo reciclável em até 48 horas. As médias geométricas para CCS foram de 506.000, 485.000, 440.000, 387.000 e 449.000 cél. /mL. No 1º período da IN-51, 75% dos produtores estavam com valores de CCS acima de 315.000 cél./mL e 25% estavam acima de 816.000 cél./mL. Já no 2º período 75% dos produtores estavam com valores de CCS acima de 251.000 cél./mL e 25% estavam acima de 717.000 cél./mL. As médias geométricas para CBT foram de 286.000, 345.000, 481.000, 214.000 e 179.000 UFC/mL. No 1º período da IN-51, 75% dos produtores estavam com valores de CBT acima de 170.000 UFC/mL e 25% estavam acima de 1.253.000 UFC/mL. Já no 2º período 75% dos produtores estavam com valores de CBT acima de 136.000 UFC/mL e 25% estavam acima de 842.000 UFC/mL. Durante o período estudado as médias geométricas de CCS e CBT atenderam as exigências da IN-51. De acordo com os resultados dos quartis há uma tendência de diminuição da CCS e CBT ao longo do período estudado.
