Resumo: The analysis of the sample of Jornal do Commercio¿s advertisements (from 1849 up to 1890), concerning to the offer and demand of male and female cooks (slaves and freemen, Brazilians and foreigners) for the domestic tasks, pensions, coffee-houses, taverns, restaurants, hotels, bakeries and patisseries; as well as the menus, products and services offered by these establishments, shows the real importance of newspaper advertisements for the comprehension of social and gender relationships in the domestic and public spheres of the production, selling and consumption of food, and above all the fundamental role of European immigrants in the evolution of nutritional habits of Rio de Janeiro¿s population, particularly in the daily life of public space.
